The seneschal's dialogue becomes limited to the subject of the Amaranthine quest as soon as you return from your meeting with the final companion.

After recruiting/meeting all companions, you are instantly taken to the main story's two final quests. That's all well and good, but it begs the question... Does this mean whomever is recruited last simply won't get the chance to take the Joining?

Yes, if you recruit either Sigrun or Velanna after picking up Justice one of them (whomever is last) won't be able to go through the Joining. It's best to do Blackmarsh last as Justice is in the body of a Grey Warden and doesn't require the Joining.

You can actually get Sigrun (I can't remember if this applies to Velanna) to undergo the joining, but it requires a bit of awkward backtracking with her in your party. Once she's your companion, head straight back to the keep to do it, then go back to Kal'Hirol to officially finish the quest.
