Couldn't agree more, there are some really cool looking one handed sword hilts but since the only good one handed swords hace no hilt slot, they become pointless 
I ended up just using Caliban on my last sword and board inquisitor. Thankfully its base stats and the masterwork it's crafted with aren't too bad, and if you equip it with a masterwork skull grip it makes for a half decent weapon that doesn't look too bad either. Aaaand now, coupled with a crafted "The Best Defense" shield from the Trespasser DLC, it should make up for any short comings that Caliban has with dps. 
Oh, and @ the OP, that's what I'd recommend if you want a one handed sword that looks paladiny. Caliban's stats are good enough for end game play as long as you change out the hilt for something better. I'd have mentioned it before but I honestly completely forgot about Caliban until about an hour ago when I was looking through my old reaver file. lol
Orrrrrrr if you're up for the idea of going two-handed, I really like crafting a Balanced Greatsword for Cassandra, and using the Jeweled or Etched Pommel schematic, along with either the Butterfly/Firm Greatsword Grip, or Masterwork Etched Greatsword Grip upgrades to really compliment the "divine" look that I aim for when I'm making a weapon for her. Just a thought! 
Here's what that looks like crafted with the Butterfly grip, and Etched Pommel if you're curious. Admittedly the materials I used in this file weren't the best or most optimal, but I really like the look regardless, and Cassandra seems to do pretty well with it even on nightmare, soooo yeah, I kept it.
Anyway sorry for the long post, I just happen to share your affinity for cool looking swords (and all fantasy weapons and armour in general really), so going a little overboard was too easy. haha
