So a little unfair and a strange bit of gameplay indeed.

I am stuck at the boss with 0 potions and everyone has no health. Absolutely no where to go and no way to pass, so I know its been heard before several times but why take out the healing. I don't get it. I have to start the game over now.

Also make multiple saves so you can back track a bit if you need to.  I rotate between 3 saves on each char so I don't lose much if I run into trouble.

Envy's tough, but far from unbeatable.

As noted, there is a potions cache on the ledge just before the fight.

Barriers. Guard. Lower difficulty. Previous save.

Also, when in doubt, use Weapons of Mass Destruction (ie Jars of Bees)

How can this be the health pots fault? Or lack of healing spell?

If you have to restart the game you really need to save more often. You should at least have an auto save.

Also try lowering the difficulty.

Unless you activated that trial which removes them. (I don't remember the name, but it should be in description)

Not to mention the game itself keeps two autosaves and a milestone.

There are 2 possibilities for your situation.
1- you used all your potions before reaching the boss and didn't notice the cache of potions  before the boss
2- you have trials on
. and one of them make the potions only health 1 and there is another one that removes supply caches.

check this 2 things,
TIPS :  the demon is pretty easy, even without health potion. use your mark in the beginning of the fight. this will make him vulnerable from the beginning and you will gain time. Thenwhen he uses his invulnibity again. make your companion focus 1 monster and make Casandra use challenge on the other one. that will make you free to use the mark again. repeat it for the second wave. close the rift. you win

Huh? Mark? Mark of the Rift?

You don't get that until Haven, mate.
