Interesting idea. My ending is destroy, but I'd take control as canon too. Synthesis is the absolute worst and if given the chance I'd schedule an appointment with Mac and my fist.

The thing is that Control is a very open ending. You're free to decided how your Shepard uses the Reapers: does he indoctrinated people, does he kill people, does he enforce peace with threats, etc etc because it's not mentioned in the epilogue.
My Paragon Shepard (who is my canon Shep) is more of a peacekeeper and a guardian. He helps when there is conflict, he shares some of the knowledge he now has, that kind of stuff. He doesn't use indoctrination or the Reaper Husks.
My Renegade Shepard is a dictator. This Shepard likes having power, so now that he has the Reapers he feels really powerful. He definitely abuses of his power. He indoctrinates influential people (for example the Council) and he uses the Reaper husks. He rules with an iron fist.
Obviously, this is what I think my Shepards do so it's basically headcanon. If something new comes up and contradicts one of my headcanon, then my headcacon will change according to this new information. For the moment, people who chose Control are free to decide how their Shepard acts.
Having post-ending headcanon isn't bad if it doesn't contradict what is said in the game.

Well I didn't really go into details, but my Renegade Shep is pretty crazy. He actually starts indoctrinating everyone and makes them worship him. I have a bunch of headcanons haha, every time I finish a playthrough I create a post-ending story
Probably one of the cringiest endings I've ever seen. In fact, I'm trying to find an ending that made me cringe more than MEHEM. KOTOR 1 Light Side ending comes close.
