I think the only one I purposefully skip is the Spoils of Desecration one because no. I'd like to skip the shards but my brain won't let me. I like the astrariums.

There's a quest in the Hinterlands where you have to return an amulet to an altar where the XP payout is obscenely high. I tend to avoid that one.

Ditto, I never do that one.
I've also never bothered to try and collect all the mosaic pieces or do those quests where your supposed to find the location drawn on the note.
I did do skyshards & astrariums the first time around but I didn't bother with them in later playthroughs. It was fun once, but not fun enough to do again.

Any of the collectibles. On my first PT, I attempted to collect most of the shard. Eventually got bored and haven't tried again on subsequent PTs. It doesn't help when that it took several minutes of precise jumping to get that shard in Hinterlands. I don't do the map markers anymore, or the bottles. I enjoyed the astarums, but don't feel like repeating them. Only collect mosaic pieces that are right in front of me.
Generally, I only do collections if there's a good reward at the end (like a great schematic), and even then it's usually just on my canon protag.

The desecration I have only done once as Ser Trevelyan. Most of the mosaics never get finished. I probably will someday though. I skip zones more dependant on my IQ. So Lavellan never set foot in HW and Cadash might skip the graves or the Dalish favours etc.

I don't get the aversion for the shards. Most are easy to get to in locations you pass by anyway. And one would think people appreciated the resistances especially on harder difficulties.
That said I generally avoid the clear the barricades quests in Exalted Plains.

I wish I could skip shards but like others, brain wont let me.
I cheat on the Astarariums and just google those because otherwise I'd just kill myself.
I skip the elfy screwing their temple over. once I did it and felt real bad, but it was because I paid no attention to the dude and accidentally destroyed some of the things - so I thought oh hell too late now lets go full Hulk mode.

1. Anything pertaining to Vivienne.
2. I refuse to hunt the ram for the refugees in the Hinterlands (hey, bloodthirsty douche-bastards, I've got a lifetime supply of wolf, bear, and lizard meat, a metric ton of herbs and vegetables, and a pretty impressive collection of rare wines, also, wheels of cheese of various flavours and sizes seem to be littering the countryside. I know these things are a poor substitute for the tender, innocent flesh of the ram... so, whiny choosers get to eat each other for sustenance).
3. I refuse to kill the mama bear in Emerald Graves and mama wyvern in Crestwood.

Avoiding a quest is just not in my DNA. Though if I pull up the journal towards, I do sometimes forget about the last hinterlands quest where you have to bring felandaris to some statue. By the time I find felandaris, I am over level 20 and the need to run all the way back there to finish such a low level quest isn't very compelling.
So while I don't avoid it persay, it just simply seems futile at the point you can actually complete it.

It is extremely difficult for me to ignore ANY quest whether it be the smallest of quests or the biggest one of utmost importance. I am a perfectionist at heart and simply must have everything known to me achievable achieved. I must say though, I do hate the shards and the mosaic pieces, especially since the mosaic Codex entries are very disappointing and offer no new knowledge really and as hard as all those pieces are to find you would expect far more understanding and learning to come from it. But no quest is skippable for me!!

For those who say the Golden Halla. I'll probably jinx myself for future playthroughs but... It's actually a rather easy quest to do once you figure out it's behavior.
Use your mount, leave from the right hand side of the dalish camp, find the Halla, pursue it towards the left and down of your screen making sure you're to it's right and above, and it pretty much drives itself right into camp. Essentially you end up doing a big loop to go from one side of the dalish camp to the other.

I avoid pretty much everything on Exalted Plains, once I'm done with camps, shards, wyvern heart and dragon. Well, avoid is not the right word, I just lose interest in that map.
For those who say the Golden Halla. I'll probably jinx myself for future playthroughs but... It's actually a rather easy quest to do once you figure out it's behavior.
Use your mount, leave from the right hand side of the dalish camp, find the Halla, pursue it towards the left and down of your screen making sure you're to it's right and above, and it pretty much drives itself right into camp. Essentially you end up doing a big loop to go from one side of the dalish camp to the other.
The halla is easily herdable on foot, you don't even need mount. When I was a kid, my grandma had chickens. And believe me, herding that one halla is a piece of cake compared to herding ten chickens into one hen-house at the same time.

I agree it is a simple matter.
And I do it on foot, don't even use a mount.
I just find it annoying.
Plus,
On a couple occasions,
I've had a rage demon pop-up and set fire to the golden halla!
It was quite hilarious to see the golden halla go streaming across the Exalted Plains bathed in fire!
But believe it or not,
It was not so good for the gold halla's health...

I have not done the Dwarven Ruins Journal quest in the Hissing Waste - it seems like such a bother for so little reward.

I'm a completionist at heart, so I have to do all the quests, and collect as many collectibles as possible. I find that there is no limit to my imagination when it comes to forcing one of my characters to accept a quest they probably shouldn't be willing to do - actually, this even extends to getting (and usually keeping) every single companion.
Aside from the ones where you lose one for doing another, the only quests I don't do are the ones I don't find, and the ones that you can't justify your character doing.
This applies to every DA game.

I usually with great pain do them all on most characters. But in more recent playthroughs I've been avoiding most of the fluff in the Hinterlands like planting the flowers, druffalo escorting and the widows ring. I do the shards for the resistances and it least feels more adventurous than say chasing a goat... I attempt the golden halla, get bored and hunt it instead, screw the Dalish favour.
It depends on the area I suppose, having so many characters I'm a bit sick of the sight of the Hinterlands, Storm Coast, Fallow Mire etc. but I love the likes of Emprise de Lion and Emerald Graves so I tend to complete those everytime.

Ah I hated that temple as well, forgot about it.
The druffalo, goat and halla were annoying as well.
Running that druffalo back to the farm is a bit tedious, and certainly chasing that damned halla around is more irksome, but I just can't resist killing Lord Woolsley every time his orange-furred ass shows up!
