So what is that thing on Briala's head. Is it her hat or her hair? I had always thought it was her hair, but when I played again last night, it actually looked like a kind of hood thing.

It's one of Orlesian masks. Her actual hair (especially bun) clips through it.

The red stuff is a fabric cap that's part of her mask. If you use the mod to remove her mask, she has short black hair under it.
Try putting one of the masks you get after the ball on one of the female characters in your party, you'll see they get the same weird fabric bun you see on Briala.

I think they put that particular mask getup on her to hide her hair, which is supposed to be all curly and voluminous but since that kind of hair isn't in the CC...

Your females companions have a similar look if your put one of the masks on them. Try it on Sera and you will see.
