Being a noble in Tevinter is defined by having magic in your bloodline. They don't have any other kind of nobility there, and they don't even call it that. You might end up as a social outcast if you belong to such a bloodline and had the bad luck of not having magic, but it won't make your family lose their status immediately. It's the bloodline that matters, not the individual. 
 
So a "noble" background in Tevinter would be necessarily an Altus family. Or possibly an old and well-established Laetan family, if such exist.

Well, yes and no, the real nobility in Tevinter are the Altus families, all of whom have a seat in the Magisterium. Just having magic in your bloodline doesn't really give you much status. Laetan families who achieve similar status would be rather few by comparison.

I do wonder what happens to a child born without magic in an Altus family though. I imagine they could remain part of the family, but probably expect only a meager inheritance.

Most likely shuffled of to the priesthood w the military and the Tevinter Templars I would imagine.

Why not just create like what they did with the Dwarve Origin backstory: Aeducan / Brosca (was that it? Its been a loooong years ago since i've played the game)

Since there are those who would no doubt wanted to be nobles and there are some who wants to be ordinary joes.
So! Instead of replacing a flavour, better ADD a new flavour I say! More varying choices on your ice cream stand! More taste to sample, munch and ponder upon and stick a favourite or eat them all :lol: <3
