I just finished the game but I made a point to save just before the operations, I have barely progressed afterwards so im thinking to go back to that save and do all the quests and stuff that you cant after the story but what my question is?

Apart From the Companion quests what quests cant you do after finishing the game?

Well, some quests cannot even be completed if you have only "Doom Upon the World" left because some enemies do not spawn anymore (for instance Weed Out Bandits in Crestwood was bugged for me this way). Basically if you only have the last quest to do, the world becomes weird for some reason and quest things don't spawn anymore.

So I hope you have a save before What Pride had Wrough (Mythal Temple).
If you are going for a completionist playthrough I suggest you do everything before starting What Pride had Wrought, at least the quests.
The collectibles (bottles, mosaics, astrariums, shards etc) can be done also after the end of the game.

The DLCs can also be done after, with the only difference that of course you will not have Solas (and Cassandra if she is Divine and you don't invite her to come back to the party).

Trespasser ofc can only be done after :P

There are some war table operations/quests/new areas that pop-up from exploring various regions.
(Not sure if they'll all trigger after the main story of the game is completed?)

So if you're a completionist,
There's quite a bit to be done.

I think you can't finish the Charger and the Sutherland questlines after the main game, too. During my first playthrough I didn't notice Sutherland at all, after I had finished the story I could do a few of his quests, but not the whole chain.

I learned if you romance Solas, complete the wyvern quest in Crestwood before What Pride Has Wrought or after his breakup scene the wyvern will not spawn. Also you can't complete Sutherland's quests after the Temple of Mythal.

If one wants to do everything, I think the best tip is to do all quests available before doing a Main Story quest. After a Main Story quest, more side quests open up. Do all of those, and then do the next Main Story quest. Repeat.

Generally speaking, they do introduce higher level quests early in the game that one may have to wait to do.

Luckily I found a save from when I was still farming power for What pride had Wrought.

PS The only reason I wnna do all the quests is because I want all the exp to level
