They seem like scavengers. There was that forge master in the deep roads who made that spear throwing bow. So I think they cobble together items they loot from victims, and maybe the coins were stuck in the clothes/armor they find and they don't bother removing it.

Trophies, mostly. The other races value those shiny discs of metal.
It's like how in the Darkspawn Chronicles, you could give darkspawn followers gifts like wine or dog bones to boost their approval. But darkspawn don't need to eat or drink; it's simply that they like being rewarded with trophies from choice kills.

Recreation, basically. Also, it's psychological warfare; darkspawn know that being eaten is an innate fear of humans.
Think about it: how could they sustain their numbers in the Deep Roads if they all needed to eat regularly? You can't grow anything down there, so even if they didn't cause living things to wither in their presence, that basically kills any notion of raising crops or maintaining livestock. And they're not sustaining a population of tens of thousands by eating the occasional dwarf.
This was confirmed by David Gaider way back.
Darkspawn don't require food for sustenance. The corruption within them keeps them alive. They can eat... but if they do so they do it for reasons other than dietary.

How does anyone know about the eating thing anyway? Scouts spied them doing it? People found half eaten corpses left in their wake? Escapees reporting what they saw?
If any of these are true then it doesn't seem as if the darkspawn are doing it to mess with anyone's head because they aren't going out of their way to make it known and people are only finding out about it because they're stumbling upon it.
Also, knowing your enemy wants to eat you doesn't accomplish anything other than your refusal to surrender or be taken alive. The more of a monster your enemy is, the harder you fight.

I think it's psychological warfare among survivors and witnesses, who carry back the story.
Morrigan mentions it in DAO. She was watching from afar, presumably in animal shape.
As for the OP, it's a pretty standard game trope. That said, they salvage their armour and clothes from their victims, so I just assumed the money was already in the pockets, like for the walking dead.

Also, killing Darkspawn on my most recent playthrough of Inquisition with this thread in mind, what I'm noticing is that they research items and textiles mostly. Maybe I've been unlucky, but I have not seen gold.
Looking over the wiki, I find they can drop King's Willow Weave, Highever Weave, and Plaidweave. The first two sound crude and primitive, but I have to wonder at all these Darkspawn in plaid ![]()
