Why do templars in the hinterlands attack you?

They consider everyone in the region to either be a mage or a mage sympathizer. And any armed force moving in on the area, like the Inquisition, is a threat to their holy calling.

This. Read some of the codex on the Templars from the Hinterlands. Anyone who could possibly produce a mage ends up being a target.

So there you have it. If you're not with the rebel templars, then you're against them.
Also, they have to get their supplies from somewhere, so they resort to banditry and stealing from the refugees. The apostates do the same thing. This is a pretty common occurrence in RL warfare.

I mean, there are written excuses given but its basically just mages and templars are attacking everybody because the story requires there be chaos, the open world regions seemingly require universal enemies and having both sides be essentially rabid is the laziest way to do it.
Alternatively if you go by the cutscene that opens things up its because the Inquisition attacked both sides when it moved in to take over.

I mean, there are written excuses given but its basically just mages and templars are attacking everybody because the story requires there be chaos, the open world regions seemingly require universal enemies and having both sides be essentially rabid is the laziest way to do it.
Alternatively if you go by the cutscene that opens things up its because the Inquisition attacked both sides when it moved in to take over.

I honestly didn't mind it. I liked that it showed that not all of the templars and mages were of one mind and some were even further gone than their main forces.

Yeah, I'm glad Harding is in subterfuge rather than diplomacy. Her solution to bringing peace to the Crossroads is to shoot everyone in the face.
Granted, the cutscene is out of context and for all we know, the mage she shot was just about to attack a peasant rather than another templar.

As well as the Grey Wardens and anyone else who needed to do something absurd, stupid, or generally irrational for plot reasons.

You call it murder, I call it "putting one out of their misery"
Cullen would be a husk, not remembering his name anymore. Without anyone to properly take care of him, death is a mercy.
Plus, nothing states she did actually kill him. The slide states that she either left him coin, or killed him... and leaves a remark that neither is certain, leaving for the player to decide.
