Why does corypheus look like his body is made of bloody plato?

Just so you know... it's Play-doh (I'm assuming this is the reference you meant).
Corypheus was originally seen in the DA2 DLC Legacy. In that he looked more like a darkspawn; rough metal plates as armor, protuberances from the skin, but no red lyrium. In DAI they added the red lyrium elements, but he does look pretty similar to his DA2 appearance.

Prolonged lyrium use can cause physical mutation. The magisters of old were said to be so affected by it they didn't even look like they'd ever been human. Blight corruption makes it even worse.
I wonder what's with his height tho. He was human once, but now he's twice the size of even Qunari.

Lots of human bosses seem unusually tall in Inquisition, so it could just be a stylistic choice. Or maybe the elves aren't the only ones who shrank over the years ?

It's an effective design, as when Corypheus was originally revealed back in promo shots for the Legacy DLC, a lot of people called out exactly what he ended up being (based on nothing more than having seen the Architect).
As for his design specifically, it's a cross between the style they came up with back in Awakening and a lot of the DA2 darkspawn elements (the magisters are in at least some way darkspawn themselves).
And for the appearance, it's a combination of being an old model, bad lighting and animation, and scale.
