Iron Bull's romance is pretty supportive and has some amusing bits. Just make sure you don't let the Chargers die.

I have romanced Bull so I can offer pros and cons
I haven't romanced Dorian though, not yet.
...Okay I tried to make a PROS and CONS list but tbh it just doesn't stack up so easily. What's PRO to some might be CON to others. So I'll just tell you my thoughts about the romances, minus any spoilers.
The Iron Bull romance can be very, very funny, and can make you giggle with the way he treats the inquisitor. There are quite a few cut scenes, more so than others (i.e. Solas). You do have to kill a dragon to further the romance - do you like killing dragons? I hope so
The relationship has very strict rules. Iron Bull is the BOSS in bed and you are his willing servant LOL There's no way around this. It is written very explicitly into the narrative. Bull is never mean or cruel and clearly cares for you. But he is in charge, and yes, there is BDSM. I'm not a BDSM expert, so pardon me if I'm not relaying that correctly. To be blunt, Bull uses toys and ropes and such in bed with you. There is pain, but it is consensual. A "safe word" is employed.
Class-wise - I romanced him with a rogue. The class was never really brought up, I think? I'm sure a warrior would work very well with him. I imagine he would respect a great warrior. Your gender doesn't matter; I don't think it's referenced either. While it is clear by the end of the game that Bull cares for you, you will not get tender scenes and softly whispered "I love yous." It is not a romantic relationship, per se.

I can't answer for Dorian's romance since I haven't played it. But I would agree that Bull's romance centers around the bedroom. Again, that does NOT mean that the relationship isn't serious and that he is only messing around. He's not. It is a monogamous relationship. But if I had to describe the relationship using only two words I'd use FUNNY and SEX.

I found Bull more interesting, more physical than Dorian and, more humor involved. Dorian is rather dull to me but, if you want your warrior to be the dominant one in the relationship then, go Dorian, if you want to let go and let your partner lead, then go Bull.
Just because you romance them does not mean they have to be a part of the adventuring party - a female human or elf can romance Cullen and, he can't be in the party (except one possible quest if you side with mages.)

The only problem with Bull is that I have to kill a dragon. I'm level 13 just arriving at Skyhold, what's the weakest dragon I can go for?
That depends on whether you're playing on Casual of Nightmare... and upon your mages' spell selection and your resistances. If you're playing on Casual, I'd say that the dragon in Crestwood is the easiest. If you're playing on Nightmare, it really, really depends on your mages' spell repertoire and what resistances you have. If your mages have Dispel and you have high electricity resistance, Crestwood is still the easiest. You can use Dispel to get rid of the lightning ground circles and the fight is a lot easier. If you don't have any means of dispelling the lightning rings or if your electric resistance is bad, you might want to try the dragon in the Hinterlands. It isn't a pushover, and you really, really have to be alert for dragonlings and/or Red Templars joining the fight, and chasing the damn thing all over the terrain is a total PITA... OK, bad suggestion is bad. You might want to consider the Abyssal High Dragon instead. Except that you have to complete a long string of quests to access that one, and it takes you all over the Western Approach. OK, better suggestion: Respec your mages to have Dispell, buy some belts of electric resistance and the recipe for electric resistance in Val Royeaux, and go for the Crestwood dragon. Cassandra's Spell Purge takes care of the lightning rings, too, by the way.
Personally I enjoy both romances, regardless of class if I had to suggest one or the other I'd say go Dorian. Bull's romance feels like a bros with benefits kinda dynamic and I feel that Dorian is more in depth when it comes to the relationship and personal trials/issues to overcome. Really it just depends on what you/inq prefer. Hell, do both.
Yeah, that's why I prefer Dorian's romance to Bull's. I've done both, and I get the feeling that Bull's is less about an emotional connection and more about being in a highly physical friendship. Which is fine if that's what you like! On the other hand, Bull's pansexuality is a huge plus. He simply doesn't care about social acceptability or expectations.
I'd say that the biggest con to Iron Bull's romance is that too much of it relies on physical humor and sight gags.

Vivienne has an OP specialization which her AI uses stupidly. If you're going to control Vivienne during combat, you can definitely make a go of it, but I'm not sure I'd rely on AI to keep her alive.
Without Even Ground turned on, the Fereldan Frostback in the Hinterlands is level 12.
