I finished the game on normal difficulty and my character is lvl 49 now. I want to lvl him up to 60 and then import to ME2, but I wonder about one thing. If I did it after one or two extra playthroughs which choices will transfer to ME2? From my original playthroughs or from the last one?

The choices you make in the playthrough you import are the ones that carry over. Each playthrough has its own separate save file that can be used for importing.

I know that I got to level 54 by doing everything. That's without getting out of the Mako to kill everything on foot. I've read posts from others who got to level 57. Even read posts from folks who used a glitch/bug to get to level 60 in one playthrough

Maximum I ever achieved in one playthrough was lvl 57. But I'd say it probably takes longer to do this in one playthrough than doing one quick "main story only" playthrough first and then start again and do the real one and get to 60 easily.
That said, there is no real benefit in getting to 60 because the only difference it makes for ME2 is that you start maybe 2-3 levels higher. However, it's so easy to get to max level in ME2 that those few extra levels in the beginning don't really do much.

Same here, without cheating or using an exploit 57 is the most I ever managed in one playthrough (and that is a bunch). There just isn't enough xp to do it in one pass. It will take around half of a second playthrough to get a character from 1-60.
That said, if you're playing on the pc, just fire up the console commands, and hit level 60 before you land on Eden Prime if you really want.

If you've never played through Mass Effect 1 before, you will be capped at Level 50 in that first game. After you finish one game, then you can get higher than Level 50 in a first playthrough (but Level 57 is the maximum without using any exploits). You also get a little bit more XP for each thing, so you can get a second playthrough to Level 60 without much difficulty. The best approach, I find, is to do the first playthrough with a Shepard focusing pretty much on the main missions and then do a more comprehensive playthrough with that Shepard a second time. It's usually pretty straightforward then to get to Level 60 even if you don't quite make Level 50 during the first playthrough.
In that second playthrough, I do enough side quests that I get 10 Matriarch's Writings and get enough gases, earths, and metals to finish that quest as well. This leaves me with the option of finishing Conrad Verner's quest in ME3 and getting the 100 Mineral Resources War Asset in ME3 (if I do enough planet scanning in ME2 as well)... and I like to leave as many doors open as I can since I can then re-use various ME1 and ME2 Shepards for different playthroughs of ME3.
You can also get a LOT more XP by killing everything while you're not in the Mako. You can use the Mako to soften them up first if you like and hop out just to take the last shots but I've also done entire insanity playthroughs with some classes of Shepard without taking a single shot with the Mako (using instead a sniper rifle or an assault rifle the entire time).
Each time you complete ME1, that Shepard (with whatever he finished at) will be added to the list of available Shepards to import. Even if you go back to an earlier save and just complete the game again with that same Shepard, a new entry will be created on the list... so frequently I'll finish the game once romancing one LI and go back a redo just half the game again to generate an alternate import who romanced the other. I can create one import with saving the council and then just go back and replay the last sequence to create another import letting the council die, etc. The only time I have to start from scratch again is if I want to do ME1 with a different class of Shepard. If I want to do ME2 with a different class, it's not a problem just to change the class just after doing the import into ME2.
