I was thinking about having a character who romanced a couple people before settling down with one person. I would get to the first romance scene with the Iron Bull, get to "An Unexpected Engagement," then break it off with Josephine, then finally complete the game with Sera as my lover. Is this possible? The one problem I could think of is that the romance scenes generally show up after a milestone story quest. Also, I would like to read about your romance story. ![]()
Is it possible for me to have romance multiple people but then stick with one person in the end?

Yes and no, I guess. You can flirt with multiple companions, however, once you get a major romance scene - or a romance-related quest - all the other romance options are essentially locked.
You said you wanted to read some romance stories. Well, kill two birds with one stone, my Dalish elf (who, surprisingly, is female and a mage, because that's never been done) was very interested in Cullen and Solas (again, never been done). She was also interested in Dorian, but obviously that went nowhere beyond being friend zoned, though I still chose flirt options afterwards.
Anyway, she was torn between Cullen and Solas, she chose Cullen because he was handsome, and she admired his virtuousness and sense of justice. Also, because this was my female mage Warden world-state - I made Amell interested in him, and kinda feel bad for giving her cousin a very similar appearance and personality that reminded him of her, so I was hoping to romance Cullen this game, but I also had to fit Solas into my 4 (equally canonical) games somehow. I got the scene with Cullen and the Inquisitor atop the ramparts, where the first kiss scene takes place, but shortly after, I broke up the relationship, and continued with Solas' romance. I got Solas' first romance scene in the Fade before Cullen's ramparts kissing scene.
If you manage to get to Josephine's An Unexpected Engagement quest, you won't be able to pursue Sera's romance in that same game.

I want to focus on the cinematic aspect of the romances. With this particular game, the post-milestone (read: mission) cinematics can have various romance alternatives. So I think that if you want to focus on a romance and experience it fully, then you should pick one person and stick with them for most of the game so you can see all of the variations that are available.
Now, of course this doesn't rule out role-play. So if your aim is to start a fling with someone, have your character realize that it's not what they really want, and then move onto someone else, then of course you can do that with some of the LIs. But as Orian mentioned, some romances lock in fairly early, and what's more, some of them also do not have break up options after you're locked in. For example, I don't believe Blackwall has a break up option (I'm not entirely sure), but Dorian's is available during the entire run of the game. You might say that that doesn't make sense, that they should all have the option, or none, but I think it depends on the character's history.
And then there is also the way the game presents the companion reaction if you break it off, or just use them for sex. The only version of that I have seen is Dorian's, both the "let's keep this fun" where you have a sexual relationship, not a romantic one, and the one night stand option. Each person will react differently of course, but I don't really know how you can see their hurt, angered, or resigned reaction and not feel bad. For example, they may act like it's no big deal, but you can tell that there is some disappointment there. I think this is especially true for some of the romances where there is more intimacy and actual romance (and suggestive, caring dialogue) in the lead up to the sex, so the breaking afterward comes across as quite bad.

I think there is away to beak up with Josephine after she comes up to you while you're dueling her betrothed. If I chose that option, would I still be unable to get with Sera?

My male human mage pursued Cassandra, but he did WEWH first, and had not gotten Cassandra's pre-romance scene. So he was able to ask her to dance, but it was Josephine who went out to check on the Inquisitor afterward. So he just politely asked Josephine to dance as friends. It was after returning to Skyhold and the Divine talk that Cassandra started to show deeper feelings for him. I headcanon that her seeing the Inquisitor dance with Josephine is what caused her to start being honest about her feelings for him. Besides, the dance with Cassandra isn't all that great anyway, in my opinion. Josephine seems to appreciate it more.
I'm toying around with a female Dalish mage, and she flirted with Blackwall, Cullen, and Solas. Something went wrong with Solas though, I did the Fade thing with him and turned him down, then reloaded an autosave that should have saved before that conversation, but for some reason it was as if it saved afterward. It loaded in Solas' room, not the Inquisitor's room. So I couldn't go back. There was still one flirt option with Solas after all this, but I don't think its going to go anywhere. So I don't know at what point in a romance other romance options get locked out.

Are you sure it wasn't Blackwall? I don't do any flirts with him at all because it's too easy to be locked in with him and not realize it. He's got a soft lock that stops some other flirts; I wouldn't be surprised that his point of no return isn't even obvious like the others.
To the OP - the others have the right of it. On my current Nightmare playthrough I thought I would just deal with all the generic side-stuff first and leave main missions alone, get everyone that would respond to my character (on console, no mods) up to right where they would be "point of no return", and then diverge with a couple different ending playthroughs. But what's weird is everyone has different things to say at different points all the time and maybe I'm missing a whole lot more dialogue than I thought doing this.
Tonight I roll the dice to decide and stick with one companion. The others will have to wait for a different Inquisitor, and a different playthrough, I suppose.

This is an... interesting strategy.
Don't forget that, romances aside, there are different dialogue cues based on approval as well. For example, you have to be at a certain approval level to get Cassandra's fangirl cutscene and quest.
So, if you do as you plan and stack the missions together, the large succession of approval gains and losses, without the natural breaks in between, might cause you to miss dialogue that you otherwise might have gotten.
In order to see everything, I think the best way is to go on about the game and occasionally just make the rounds to talk to everyone. And this is mandatory after each mission, as almost everyone will have something to say about whatever it was.
Of course, after you've played several times, as I have, you know when certain follower dialogues are cued up, so you can delay talking to them if you don't want to trigger something. For example, I have a certain head-canon that compels me to delay the Cullen/Dorian chess scene. It's extremely minor and only for RP reasons, but because I know when that is cued up I can avoid talking to Cullen until I'm ready to see it.

I don't think so. I mean, I haven't gone past the scene where they're in the Inquisitor's private room, around the start of the romance, but it's likely that breaking up after getting so far into the romance means that it'd be too late to pursue anyone else. Others might be able to give you a better answer.

Ah, I see. Thank you for telling me, but now I will have a hard time deciding which person I would like to stick with. I'll probably save before An Unexpected Engagement and then see if it really is possible to get Sera after breaking up with Josie.

I finished my Canon and a Male Lavellan; cause Elves rule! Even thought my Canon is human Femae Mage who romances Cullen.

I broke up with Josephine during An Unexpected Engagement, got to the first scene with Bull, then said "katoh," then spoke to Sera and got A Woman Who Wants for Nothing right after. So, yes, it is possible. ![]()

My first play through, I romanced and slept with several of the character and broke up with them before settling on Sera. Unfortunately, Josephine's sequence leading up to the duel fired for no reason during the play thru and stopped the advancement of the Sera romance. I could never get rid of Ironbull's dragon tooth quest nor could I turn it in, tho I had the tooth, and generally got screwed, also started Solas romance.
At the end Sera said, she wished we had more time and I ended up with the no1 romanced option.
Second play through I screwed around with everyone again, but didn't follow quite is far with with the romances...ended up bugged again. Sera romance stalled in progression again, even though I get sex scene, I never got tavern scene. I had to break up with her right before cory fight. It was bugged. Went to Cullen. Fired all scenes got the romance credit.
Third play through, just romanced Sera...this time it was personal. I tried every fix, went to forums, went to EA, went to old saves...nada...don't do it.
It's not worth it if you get bugged.
Edited for romancing everyone possible.

I didn't do all three characters at once, I stuck with that one person until I wanted to break up with them.

Past couple of games I rode the Bull before settling down with Sera. Too bad she doesn't like to share.

I play female Lavellans thus far, each different. I plan to play other races in the future, but I'm an elfy girl at heart and really love the richness that comes with the elf storylines.
My first playthrough with a female Lavellan, I played a wisecracking tough girl who flirted with Cullen and Solas, but who ended up with Iron Bull (and I really loved the entire romance, which was complex and absolutely hilarious).
My second playthrough, I played with a quiet, very elfy-elf Lavellan who romanced Solas exclusively, and I found the entire romance incredibly rich and satisfying from a story perspective. I really think you get the best insights into Solas through the romance -- it adds so much complexity to the revelations about him in DAI and of course to the stakes in "Trespasser."
After gazing at him longingly with my previous Quizzies, I'm currently on a Cullen romance playthrough (because: Cullen. Sigh.) But I did go ahead and let my girl plant one on Solas in the Fade before breaking it off to pursue Cullen. (And Solas's response was so sweet -- it kind of disarmed me. She says something like, "You're right, it's complicated, so it's best to be friends then," and he says something like, "But I will always treasure an unexpected moment in a dream," and I was like, DARN IT SOLAS!)
I love all the romances I've experienced in the game thus far, and have been really impressed at how much thought and character goes into the writing. Each one offered a unique experience thus far -- from Iron Bull's that starts with sex and progresses to love, or Solas's which is pretty tragically romantic, etc. And at the moment, what's awesome and surprising is that Cullen is so utterly shy and hesitant about the romance stuff, and it's pretty endearing and adorable.
Also, when Cullen's initial kiss on the ramparts is interrupted (sweeping music, Cullen leans in, then BOOM the courier shows up), I laughed out loud. I love the way the game infuses humor into these types of moments (and of course nothing beats the Cullen/Cassandra/Josie discovery of Bull's relationship: "I cannot feel my legs.").
