DA2: Second half of Act II, starting with Leandra's death and going up through the final encounter with the arishok. The specific Hawke that I played, and the degree to which I committed to the roleplay, meant that the whole thing was very emotional for me. I also liked Legacy, although I would've liked it more if my companions hadn't been comically incompetent at pathfinding.
Inquisition: That last insane all-out push at the end of Trespasser through the Shrine of the Dread Wolf. Epic freaking music, epic freaking stakes, and an epic freaking boss fight at the end with Saarath. In Your Heart Shall Burn was pretty good, too; it's one of the rare moments when an enforced defeat in a BioWare game didn't feel infuriating.

Every freaking part of it. Seeing a swarm of mage armies descending upon Haven, giant Corypheus, darkspawn dragon and Cullen's crazy idea of using catapult to triger an avalanche. That painful walk in the snow, people dropping their knees to my elven lass and especially now, I can almost hear Solas chuckling to himself: "Herald of Andraste?? More accuratelly as Herald of the Rebel Pantheon
Champions of the Just. Because Ser Barris. And Abernache needs to pair with Movran. For life XD (funniest war table mission ever)
The Fade trip with Cassandra. And the scene after that in Adamant as well as Haven.
Meeting Mythal (because y'know.. MYTHAL

Riot Inducer, That is what the Army would call winning of the hearts and minds. At that point of the game the Inquisition needs support and should do all it can to gain that support and filling those hungry bellies will work wonders.

DAO: I really liked the elves vs werewolves quest, Nature of the Beast, it had some twists, and since I haven't read about it at all, I was surprised by it. And Brelican Forest was fun to explore. Poetree, heh. Following Branka's traces in the Deep Roads was also a great moment.
DA2: I adored the game, there are a lot of missions I liked, Leandra's and Karl's death were incredibly sad, Shepherding Wolves made me hate Petrice and the chantry, but I think my favorite was the Long Road. I laughed through all of it. Especially:

I like anything that gives me more insight into a follower's character, so I always look forward to the loyalty quests. Favorites are...well, everyone's except Viv's and Varric's. I really wish they had more of these types of quests like they did in DA2. I also really love the entire Descent dlc, the music, the lore, the combat! I *always* look forward to this part of the game, so much fun. Also, killing dragons with Iron Bull, Sera, and Solas. Good times.

Oh, and the cutscene at the beginning with the advisors showing off was amazing. Preparing for war, in a great demonstration of how powerful the Inquisition has become.

For DAO, it's A Paragon of Her Kind. Not really one quest, but the whole questline. Orzammar is beautiful and terrible; going there as a mage is fun because everyone's so taken aback. But nothing beats returning home as a casteless dwarf. Reuniting with your family, having more respect in your homeland than you ever have before - and STILL being spat on by certain people (*coughHarrowmontcough*), knowing that your intervention will change the fate of your people forever... the decision over the Anvil and the next king is so much more gratifying with a dwarven PC. Ahhh, good stuff.
DA2 is difficult, because there's soooo much I love. Maybe Blackpowder Promise/Courtesy and the lead-up to the confrontation with the Qunari. You can feeeeeel the tension in every scene. Losing Mama Hawke was painful. Seeing Carver return in The Last Straw was a great moment, and knowing Hawke got used and betrayed by Anders was equally great in a rather different way. My heart still huuuurts.
DAI I'll say

DA2: The part when you enter the Fade to help Feynriel (don't remember the quest's title). Having your followers accepting the demon offer and betraying you was interesting.
DAI: When you team up with Hawke and his Warden ally (Loghain in my case, forgot quest's name, I've played DA2 and Inquisition fewer times than Origins).

Hnnnng, I guess I ought to post mine.

DAI I'll say Sera's entire romance In Your Heart Shall Burn was full of oomph and struck a tender chord in my cold decaying heart. *sniffle* Likewise, In Hushed Whispers was simultaneously horrifying and heartbreaking on... literally every level. Seeing my loved ones corrupted by red lyrium and then sacrificing themselves, knowing that Alexius did it for his son, Felix and his beautiful flawless soul in general... gah. It hurts.
Shucks man, that was beautiful *sniff*

DA:O - Orzammar/The Deep Roads arc. Its just amazing. Dark and creepy, but in a subtle way. Broodmothers and their Origin, ugh.
DA:II - Demands of the Qun. The Arishok is awesome, the fight was interesting, Isabella's return.
DA:I In your Heart Shall Burn. Corypheus arrival and dialogue. The combat in that section is awesome, well paced and quite difficult. Mother Giselle/The Dawn Will come.
So yes everything main quest related. If i could have added more it would be The Landsmeet Arc in Origins and What Pride had Wrought in DA:I.

No argument here, however outside of that subtext it's literally a bog-standard MMO "Kill 10 x" quest. I just found it a bit odd that such an uninspired quest type would be such a memorable moment.

Riot,During that quest I also set up camps, find a cave, stop at a town and close a breech out side of that town, close another breech near a camp site, find a lost scout and kill some baddies. It equals out.

Well, my favorite quest in the series is The Last Straw in DA2. It's quite rare for a game to have your final battle be against a genuinely superior force where you don't know how you'll even survive, much less triumph, but DA2 actually pulls it off. Everything's collapsing, you have to fight your way through demonic incursions and templar patrols to reach the Gallows, and then the final strike outward... it's very well done, except for the Orsino idiocy, but that wasn't the fault of the writers, so I'll forgive them.
Now, for Inquisition... In Your Heart Shall Burn, for the same reason. The red templars make for quite a menacing invading army, and Corypheus' introduction is great; I particularly liked it as an elf because of the huge contrast between my Inquisitor's size and Corypheus'. DAI could easily have been my favorite Dragon Age game if the rest of the game maintained that level of quality.
These were great, and I would add the Defense of Redcliffe in DA:O particularly when the undead never ended. I agree about The Last Straw. I've always said the fight with the demons before you reach the docks is a MAJOR boss fight.

Hah, this was me on my first DAO play. Made Alistair king, refused dark ritual, and the man insisted on sacrificing himself. I replayed the final battle three times trying for different dialogue options so I would die instead, but no such luck. And he wasn't even my boyfriend.
If you've broken up with him (his "love" meter isn't high enough) he'll let you die. At least, the very first time I played he did. We were lovers, we broke up (he wasn't hardened) and he let me kill the archdemon. I think the only time I was ever more shocked was the first and only time I let Loghain live.

I'm going to stick with Inquisition because it's been too long since I've played the other games.
I like anything that gives me more insight into a follower's character, so I always look forward to the loyalty quests. Favorites are...well, everyone's except Viv's and Varric's. I thought Vivienne's was disappointing because there was so little interaction with her. A significant chunk of the quest boiled down to a fetch quest that she is not even required to attend.
But in that play he wasn't my boyfriend at all. I had made him king and he was unhardened.

The part when you're going to find Skyhold, with Solas talking as the voice-over. Goosebumps every time! Also, returning to Skyhold after defeating Corypheus, but with a Cullen-romancing character.
