How is the game as compared to the Souls games and the Witcher series?

Kind of off topic, but if you like the Souls series and are looking at Dragon Age, Dragon's Dogma is a good halfway point when it comes to style and combat.

If after so much praise, and watching so many let's plays, I say I am not interested... it probably means something. And I'm unwilling to shell money out for something I don't find remotely interesting.
Fair enough although actually playing a game and watching a lets play has a huge difference for me personally. But if you don't even find it remotely interesting then yeah there's not much point in trying.
Its better then both games/ series.
Why?

Why?
Fo the Witcher I found the world, mainly the Skellig Isles, ridiculiously hard to get around, and the levelling system was pretty broken. Not enough real interaction with some of the secondary characters either but by and large it was a very good cast.
With Souls it seems to be a bland hack and slash which does not even appeal to me as being a casual game since you can't play it casually.

Simplifying:
Dark Souls (and the sequels) - Well made action RPG
Dragon Age Inquisition - A RPG without identity that don't really know what it wants to be and ends up doing absolutely NOTHING well. However, as a redeeming factor for some people Bioware characters are interesting (lol), well written (lolololololololol) and well voiced (at least this one is true). Just try to picture dark souls pretending to be way more epic than it is and having a completely failed combat system from difficulty to systems and skills. You end up with a boring game with poor content to fill in the blanks (and what a huge load of blanks)

You know I like to consider Witcher a (much better) DA 2 in a lot of ways. And in a lot of the same ways. LOooooooovvveeeeeeedd Novigrad to death. Hated Skellige with a burning passion. Fortanatly that was not the end of the game or I might've had a lot dimmer view of the game. The battle of Kaer Morhen and the quest where you hunt down Imerleth and the Crones was some of the coolest **** ever.

I really like Novigrad but tbh Skellige was my favorite place in TW3. Riding your horse in the wilderness next to the clear blue waters along the long beaches on the islands while listening to the Celtic background music is probably one of the coolest things you can do in game. I loved the people, culture and everything about Skellige and the missions there were some of my favourites. Sure there were a lot of islands and too few boats but damn it was fun.I agree though, the fight with Imlerith and the crones was pretty amazing and one of the best moments in game although Imlerith was a tough mf.

As opposed to the Fetchquester, I find DA interesting, with a compelling story (No, bedding a woman in the first hour of the game is not how I picture romance...).
That's an odd complaint considering the Witcher games are sequels to a series of fantasy novels. In those novels Geralt has a love interest, and it is that love interest you see at the beginning of the game. Honestly it wouldn't be the Witcher if Geralt didn't have a past romantic connection to Yennefer.
CD Projekt Red was already on shaky ground as far as the canon goes by even giving players the option of having Geralt go for Triss instead. It's sort of like having a LotR RPG with Aragorn as the main character, but being able to choose Eowyn over Arwen.

Dark Souls sucks, massively overrated. It's more like a snazzy version of ghosts and goblins than anything else.

Not to mention it was all in his head anyway.

The fetchquester comment is also quite amusing, considering the side quests in TW3 are packed with much more story and interesting characters than side quests in DA:I. Fetchquester would be a much more apt description for DA:I.
I could see someone preferring DA:I for any number of reasons, but if that reason is "The Witcher 3 has a greater percentage of fetch quests" you've either never played the game, or you're fanboying hard for DA:I. Because that's just completely false...laughably so, in fact. That's in the same ballpark as saying you prefer the original Mass Effect to Fallout 3 because of Mass Effect's amazing system of inventory management.

...oh, is Yennefer anywhere nearby during the first Witcher?
I wanted to play all three, as with any trilogy. I tried the first, it was simply a Fetchquest upon Fetchquest.
And this actually means that he cheats on his love interest IN THE FIRST HOUR OF THE GAME.
How is that any better?
I'd be willing to accept the missing link... but that seems to have been put in to simply appease the teenage fanboy horde by giving them a chance to shag Triss nearly the first thing you do.

Did you just say that I claim to have played the third one?
I thought I made it pretty clear that the first game is what earned the name "Fetchquester" with me. And that this approach to the first game of the trilogy, as well as complete failure to get me anyhow interested in the lore and story (If it got me interested, I'd end up on the Wiki and buying the books within the week, not to mention Witcher 2) makes me unlikely to ever bother thinking about playing it.
The first game failed completely to create ANY sort of strong link that would motivate me to consider playing the other two, or read the books... or literally anything.

Actually Geralt really channeled his inner James Bond in game 1. He could shag....all the things basically. Really turned me off to it ersonally. Stupid romance cards.

Yennefer was not in the first game, but she should have been. It was sort of a bizarre decision to have Triss and Shani as the two potential LIs, with the character who actually is Geralt's soulmate in the novels not even in the game. Maybe someone at CD Projekt Red just didn't like the character in the novels.
The original Witcher was a bad game and pales in comparison to the third. I thought CD Projekt Red got better with each installment. Comparing their games to Dragon Age, for me it would be...
Dragon Age: Origins > The Witcher (and its not even close)
The Witcher 2 > Dragon Age 2 (although DA2 did some things better)
The WItcher 3 > Dragon Age: Inquisition (and its not even close)

Not really, you should get to know the background for a bit before jumping to conclusions like saying he cheated. Also it seems unfair to judge the second and third game if you've only played a bit of the first game. That's like saying the LoTR series is childish after reading just the first chapter.

First time she popped up in White Orchard I was like "Oh here comes trouble." She was so amazing gorgeous though I was almost turned into a panting idiot when I saw her, but she gave off a very 'popular girl in high school' vibe. It did break my heart breaking up with her though.
