My favorite of all games is Zevran, it's just surprising. I originally just did go for Zevran, because I didn't like Alistair and Leliana that much (they ok as companions, but I didn't want to romance them), but then he was really fun and very well developed as a character. I tried Alistair too, but I really didn't like that romance at all.
In DA2 I love Anders, it's such a tragic story. And I really like the voiceacting of Anders in DA2. I did Isabella too and found it funny, but not as much as Zevran in DAO. I will try Fenris in one playthrough since I do like him as a character, but probably never Merrill.
I can't say that much about DAI so far, since I just began playing. As a female elf, you have apparently a lot of options and I was torn between Blackwall and Iron Bull (the latter seems to be surpsingly easy going for a Qunari - and I like the funny roguish characters), but I did go for Blackwall. With my elven mage I might try Spock ... sorry ... Solas (he reminds me a lot of my favorite Star Trek character from my childhood, so I have to play that romance at least once, since I had a mayor crush on Spock, when I was twelve
). And in one of my next playthroughs, I'll try Iron Bull. I'm still, mad, that Varric isn't a romance options, he probably could have beaten Zevran as favoriet romance for me.

DAO: Leliana. What's not to like? She's sweet, good-looking, and very loving. I did Morrigan's romance on my canon for RP reasons though and I hate it. Her attitude sucks and it takes her much too long (game length-wise) to get it right -- by the time she does, it is pretty much over. If that were a self-insert character I would have broken up with her. I would take Anora over her.
DA2: Isabela. Wait, I just said that I don't like Morrigan's romance for her love-averse attitude. Well, unlike Morrigan, Isabela does not come around at the same time she decides to leave you. So I actually feel rewarded here unlike with Morrigan. That scene by the tavern fireplace with Izzy (Act 3) alone is 100x > any romantic moment with Morrigan. That said, the writing on this romance is kind of clumsy (Hawke professing his/her love... after what was a clear one-night-stand).
DAI: Cullen. I think it is pretty well done with the whole addiction angle going on there (provided your decision is to help him quit).

DAO: ...no one really? Leliana was nice Alistair would've been great if his romance wasn't full of endgame nonsense, not fond of Morrigan though her romance is great and Zev is meh.
DA2: Fenris hands down. Rivarlymance especially.

There's also a way to start her romance after becoming friends with her, which basically circumvents the entire casual sex thing. I didn't even know about Morrigan's come ons until after my first playthrough.
Zevran, always and forever. He's laid-back, he's fun, and he punches you in the head with feelings, that bastard.
Normally, I love exploring the options, playing through different characters with different motivations. I have a Surana who gave Connor to the demon, a Hawke who let Meredith kill Bethany, and a Lavellan who wiped out the sentinels.
So I've tried to romance Morrigan or Leliana. I've tried to do the ultimate sacrifice.
But that damn wonderful sneaky perfect Crow bats his eyelashes, and I fling those plans out the window. The infatuation only grows with every passing game. My heart genuinely leaps every time I get a letter from that stupid surfer-looking tan bleach-haired elf boy. Talking about how much he loves the Warden and their adventures and how content they are together. I didn't sign up for this much goopiness! I didn't sign up for happily ever after! I signed up for casual, shamelessly flirty, no-strings-attached banging!

In DAO it's Alistair. Zevran is a strong second and I enjoyed the Morrigan and Leliana romances.
In DA2, this decision is harder. At first I liked Fenris (that voice) and Anders. After a few playthroughs I got tired of them both. I just didn't think they showed enough growth. Merrill was okay, but all in all I think Isabela wins this round.
I have only done 4 romances so far in DAI. I think I would have to put them in the following order: Cullen - Dorian - Blackwall - Iron Bull. Cullen wins so far partly because I usually prefer to play straight females and partly because of the way I envisioned my mage, some of their dialogs were 100% match for tone and choices. It was almost uncanny. Dorian surprised me. I loved romancing him and definitely plan to do so again, eventually. I also liked Blackwall's romance. I might do him again, but make him join the Wardens (does that break the romance?). Iron Bull was a disappointment to me. Some scenes were fun, but overall he is going to remain a friend or ally in the future. I have a hunch that I'll like some of the other romances more and he will drop down some more.
So far I have to say that Alistair (especially a hardened Alistair), Cullen and Dorian are my favorites. Again and again and again. I'm thinking my next pt will be my Solas romance. I have been envisioning that quizzie for sometime and need to at least create her. Question: Can you romance Cullen after Solas?
Rainier
The most human, honest and down to earth romance of the series imo. I would have liked to romance him as a male, but it was not meant to be. There is something about the other romances that takes me out of them. He's also probably the most masculine of the romances, and I think masculine men get a bad rap. We're harsher on them because they're harsher on themselves. I've romanced him in inquisition like 6 times when I've only done every other female inquisitor romance once.

Overall. I don't have a favourite, although Alistair and Solas are probably on par with one another and marginally better than Anders.

Morrigan
Favorite romance in the Dragon Age franchise is with Morrigan. The character herself has a cool introduction that allows a variety of responses, which can later be roleplayed into improving from cautiousness to love. Her actual role in the plot is very emotional, especially if you want the Old God Baby to be the Wardens'. And she gets DLC centered on reuniting the Warden with her and their son.
In general I just find the Morrigan romance the most compelling from a character, player, and plot standpoint. Only the Solas romance really has the ability to match those criteria, and I don't think it does.
