You become a paragon regardless if you live or die. So you don't have to do the ultimate sacrifice, but you can if you want to. That does make Awakening a bit tricky.
If you play on PC you can do some cheating to have the game recognize your sacrifice while playing as an Orlesian warden. Here is a handy tutorial by TurretSyndrome.

If you play on console or don't want to cheat then your options are:
1. Import your dead warden. They magically return to life but your other playthrough choices are recognized. This is better if you are planning to import your save state into Dragon age 2, since most of the choices that matter are made in the main campaign.
2. Play as a new Orlesian Warden, but the main campaigns story switches to the default state. So your choices don't matter there.
3. Skip Awakening and the following DLC, but where is the fun in that?

If my Warden-Commander survived fight with Archdemon, but I'd create new Warden - would that be recognized by game, or Warden-Commander would be treated as dead?

If you import your DAO world state into Awakening you CAN play as your "dead" ultimate sacrifice Warden. You technically should not be allowed to, but Bioware allowed this for players who wanted to carry on as their Warden, regardless of the DAO ending.
To my knowledge, you can NOT import your choices and still play as the Orlesian Warden, which I think is a limitation of the import system, rather than a purposeful choice by Bioware. It is either an Orlesian Warden with a default world state, OR your own world state with whatever Warden you have, overriding your decision to do the ultimate sacrifice.
However, when it comes to importing a DAA save into DA2, I don't know which choices will be considered. If DA2 recognizes your DAO choice and states that your Warden is dead, or if they are treated as still alive since you played them in Awakening and imported that save. The Import from DAA into DA2 is filled with bugs. Also, Anders in DA2 does not mention his friendship with the specific DAO Warden, and it's left rather ambiguous as to which it is.

In this case, if you want to play as the Orlesian Warden you can't import your DAO save, so none of your choices would go through. And yes, it would use the default world state and consider that your DAO Warden is dead, which is the reason the Orlesian Warden is sent to Ferelden.

I tend to skip the DLC if my character does the US but do the DLC's if the character lives.
