Correct me if I'm wrong but I think that once you have sex with someone the relationship becomes locked and you cannot flirt with others anymore.

If you have sex with Blackwall, you are locked into the romance and can't romance anyone else. Even if you break up after Revelations.
I know, it isn't ideal. This, like when Solas dumps Lavellan after the Arbor Wilds, is the perfect opportunity to role-play moving on and finding a different romance, but it isn't possible. Sadly.
Also, I can't help thinking that a better title might have been "All I want from Blackwall is sex." The difference is subtle, but significant.

It depends on the person. For instance, I know that you can sleep with Iron Bull and then move onto others. Because of this, if you're going to do a play like this you have to do (as in, do) the LIs in a particular order. Unfortunately, because of the way that the scenarios for for some of the LIs work, their relationships don't culminate until later on in the game, and also flirting with some locks you out of other romances. Because there are certain flirts in specific conversations, you're really constrained by when you can show your interest, and if you don't show your interest at that time, you lose your opportunity forever.
DA2 works in a similar manner. For instance, you are locked out of the Fenris romance if you first sleep (and perhaps even flirt?) with anyone else. Players who want to hit everyone have to start with Fenris first.

Considering that everyone else has the vibe of building a romantic relationship, I wouldn't be surprised. You can tell Dorian that you want to "keep it fun," but the erm... "relationship" continues in that case. You can have a one-off with him, but I don't know how that affects other romances.

Well, I definitely plan to have the Inquistor tap that (how many more corny sexual puns can I put in this thread) AKA "ride the bull," so if I basically have to follow a romantic arc and move forward til it's ends in sex, is there a way I can label the games in the saved menu so I know which one is what?

I think that has been the source of my confusion because I have seen many posts where the word "romancing" a character has been used interchangeably to describe flirting, having sex and (with some exception related to Iron Bull) having a serious relationship. I wish there was a better way to actually choose who you want casual sex or serious relations with.

Ah good to know. I had heard that his romance doesn't "lock in" the same way as the others, so f!Lavellan romancing him doesn't register her as "romanced" so the Dorian/Bull romance never initiates. Bull must be holding out hope against reason.

Famously in the Fenris thread someone was able to romance all three other characters before then moving on to (and staying with) Fenris. I remember it well because they said they felt like utter trash for telling Merrill after sex that it meant nothing (it was like kicking a puppy) and also for breaking up with Anders after he says "I love you" LOL
Supposedly, if you avoid Fenris COMPLETELY in Act 2, go through the other three romances, bag 'em, shag 'em, drop 'em like hot potatoes afterward, then visit Fenris... he's up for it.

Which probably explains why no one is open to romance after you break up with whomever. They see the Inquisitor coming and they're like, "Nope! I'm not gonna be the rebound guy/gal."
It's actually really funny. I haven't experienced this myself, but I think I've heard quite a few heart-broken Solas dumpees said they tried to rebound onto Cullen right afterwards (somehow they didn't get the chess scene until after the Temple of Mythal
), but when they tried the heart icon ("We should do this more some time") Cullen gently rebuffs them by commenting they're still not over Solas. Translation: "I see what you're doing. You just got dumped and you're on the rebound and I'm not gonna be that guy."
