Hello,
I was wondering if I need to download and install all the DLC first before starting a playthrough in order to access them?  For example the Zaeed DLC?

I didn't get the DLC until I finished the game. You can do all the DLC stuff after you finish the game if you wish. (If you survive)



Though some of the DLC armor is quite nice to have when you're wacking stuff.
