@dave: Yeah, Zeta there seems awfully familar. It's stumping me too. It's kinda funny and a little sad that I've been on this forum long enough to start picking out the posting style of trolls on alt accounts.
If we're doing Scooby Doo, well...I'm on thin side (finally put on weight,) and I loathe the color orange, but I'll take the Velma slot. I do wear glasses, and if I'm lucky, I won't end up in bifocals by the time I'm 40 like my dad and grandmother did. Oh and I'm more of a Black Sabbath hoodie/jeans/sneakers kind of gal. @Night: Well, to be honest, I haven't done much GF baking from scratch yet. I use Pamela's GF Mix, which is basically like gluten free Bisquick. Gluten free can be hard enough to bake right, then throw in altitude above 3200 feet. I follow the recipe on the box, only I use 1/2 cup of chocolate chips and 1/2 a cup of peanut butter chips.
I've got a very simple recipe for peanut butter cookies:
1 cup of peanut butter
1 cup of white sugar
1 TBSP of vanilla
1 egg
A small pinch of salt.
Preheat the oven to 350. Take a cookie sheet, and don't grease the sheet. I found out one night that greasing the pan can equal the peanut oil separating from the dough. Trust me, once that happens, there is no coming back.
Once the ingredients are well mixed, make small balls with your hands. Put them on the cookie sheet, then use a fork to flatten the dough in a cross thatch pattern. Bake for about 10-12 minutes.
I did ask the Sasquatch this morning to IM me his grandmother's orange bread recipe. We just sub out the regular flour for the GF. I'll pass it to you after he gets up.
