There is no Set Appearance command in NWN2. Types "commands", you will see the full list available.
You need to use a gff editor on your saved game to change your appearance. playerlist.ifo for PC & .ros for companions

There is a SetAppearance function, though, which works on the PC, so you can write a script that does it.  I use it to change the characters to a swimming appearance, and also for my shapechanging treats that were quest rewards for the Halloween quests.  It may not do what you want, though, since unless you're changing race, you're not going to get the fine-grained control of a different hairstyle, skin tone, etc.  That's what you would need the GFF editor for.

That pack was designed for builders, not for players, but it could be converted to that purpose.  The SetAppearance function would work for changes of appearance to those creatures, but it looks like they already made a script to do that, complete with UI.  I haven't used it, though, so I can't say.
