I imported my ME1 save and was "rich" so I started with a load of credits. However those will run out. While I figure out how to earn money, what critical upgrades should I invest in? I did get one to slow down the data pad incription mini-game (did I mention that I hate, simply hate, these mini-games?). But what should my upgrade strategy be?

I would get upgrades for the weapon(s) you use. I don't worry about getting upgrades for stuff I don't use.
A lot of the upgrades require the player to have enough minerals for whatever upgrade you want. Depending on your playthrough, the upgrades I would get first is the ones for the Normandy

There is a tech damage upgrade on the Citadel that would be good to have early. When you combine this with the tech upgrade you get on Kasumi's mission, and the tech upgrade you get on the Archangel mission you will be able to unlock the tech cool down upgrade fairly early on. This will reduce the cool down times on all tech powers by 20%. Generally, that is a reduction of 3 seconds for your squad mates' cool downs. So instead of taking 12 seconds for Overload or Incinerate to be ready again, it will only take 9 seconds. This will add considerably to your squad's capabilities.
The medi-gel capacity upgrade on the Citadel can also be useful for allowing you to heal yourself during combat, though you will need to get Mordin before being about to research this ability.
If you are a Soldier, I would recommend the Heavy Skin Weave upgrade at Kenn's store on Omega.
After that, prioritize first the weapons that Shepard uses, and then the weapon upgrades that your BFF's use. For instance, I rarely use Jack or Jacob, so the shotgun upgrade is very low priority for me. On the other hand, I use Garrus quite a bit so the sniper rifle upgrade is a higher priority item even if Shepard herself cannot use a sniper rifle.
Doing the Firewalker set of missions early will also get you a biotic damage upgrade and these missions are fairly easy. Except for the turrets on the final planet, you won't have to do any fighting at all if you don't want to since the artifact collection mission with all the geth is optional.

For mined stuff I go with whatever upgrades the minerals are on hand for.
I agre with cap and gown's analysis above, except that I haven't found medi-gel upgrades to be all that useful relative to the other stuff you can purchase in the early game.

Depending on the amount of DLCs you have, you will not have enough Credits to buy everything (Even with reduced prices at each store).
Apart from the what, the when might be interesting. There is a new batch of Stuff available at most stores after Collector-encounter (apart from the suicide mission itself).

Beg to differ on that... If you're careful about how you explore (i.e. do it in a manner that conserves fuel and maximizes the return on each probe launched) and you ultimately do all the assignment missions (ETA: Including some DLC), you easily have enough credits to buy everything in every store (including all fish, hamster, all ships models, and all armor pieces, and both hack and bypass modules). I have frequently bought out everything by the end of the game with an ME1 import Shep.
I do prioritize what I buy, concentrating first on weapons upgrades and either biotic or tech power upgrades and then the medi-gel upgrades (since they unlock the Trauma Module and the Emergency Shielding upgrades). For gathering mineral resources, I make sure I top up on probes to 26 to 30 each time I go out. I deplete all the planets I must scan to land on and deplete another planet or two in that system depending on how many probes I have left on me. I do eventually get the Extended Fuel Cells and Modular Probe Bay upgrades, which makes this process even more fuel efficient since I can deplete more planets in each mission system as I go. This method (combined with ultimately doing all the assignments in the various systems during the course of the game before the SM) has generally ensured that I have ample resources to do any upgrade as I've collected it, ample credits to buy out every store by the end of the game, and garnered me the 100 Mineral Resources War Asset in ME3 as well.

IIRC you need to do either Lotsb or at least two of the other story DLC missions to have enough money to actually buy everything.
Just the base game ( including import bonus) is around ~50k short on credits. (I could be mistaken, though)

You may be right on that (I've only played once without any DLC), but it's a small enough amount to be easily covered by just not buying the rather useless Hack and Bypass Modules.
ETA: I just looked up one of my old ME1 Imports at the end of the game with all stores cleaned out except for hack and bypass modules, all assignments done and all DLC - I have 184,228 credits in the bank still. Firewalker yields a total of 21,625 credits; Overlord, 45,000 credits, LOTSB, 93,600 (with investments); and Arrival, 21,050 (adjusted for errors in various summaries). Total DLC = 181,275 credits.
So, you look to be about right (with reasonable variance for fuel and probes and gambling gains/losses). Also, if you do Tuchanka early enough (so you can reset things by using missions in between) and win consistently at the varren pits, I suppose you could make up a 50K difference; but it is rather unrealistic. (ETA: I've corrected my previous post to mention DLC.)
