If your male Shep is gay, that means you can't have a gay relationship until ME3, right?
I was wondering if people still romanced Liara or someone from ME1/2 just since being single seems like you miss out on content - even if your Shep is gay. Or do you just stay single till ME3?
Yep, that's correct (if you're on PC you can mod a gay Kaidan romance though).
My 2nd MShep romanced Kaidan in ME3 and stayed single until then 
I didn't feel I missed out on content. If you're solo in ME2 (which 2 of my Sheps were so far), Mordin has a funny conversation with you which is totally worth to see at least once 
If it bothers you though to miss romance content you can always roll a bi Shepard of course.

It's the one saving grace of the lack of romance content in 1 and 2...at least you don't miss out on much if you don't want to do it.
You could always be bi and sleep with Kelly, or Miranda/Jack/Tali and kill them off in the SM so that you're free for Kaidan or Steve.

I kinda did that in my first run, but then I never take my first run very serious, haha.
Edit: However if you want to avoid casualties in ME3, break up with Miranda after the Suicide Mission in ME2 if you romance her.
How does one romance Ashley with Femshep in Me3? I did it way back when the game came out... on xbox 360 no less... but I've forgotten how I did that. lol
I remember it required a bunch of flashdriving. haha
In ME1, you'll need to change some of gender markers to romance either Kaidan and Ashley. In ME2, I don't know exactly how but you can use gibbed to allow yourself being in a romance state with someone that's not available to you. But essentially, you're playing a transgendered Shepard (even in ME1 Mark Meer voice some of FemShep's line saying he's a woman).
Except for ME3 Kaidan whose dialogue was written in gender neutral way, (i.e. he never refer Shepard as a woman again), so those who use mods could play with them being in romanced with Kaidan, for everyone else, you will get silent dialogues and maybe some hidden dialogues that was unlocked (like FemShep telling Liara that she cared for Miranda, FemShep flirting with Tali, BroShep flirting with Thane).
But even with mods, sometimes certain dialogues won't get unlocked. For instance, modded Kaidan on Horizon still won't berate BroShep about being a traitor and betraying him.
I made gay Shepard after I heard there's finally a gay romance in ME3 and played trough ME and ME2 before ME3 was released. Before that all my Shepards were straight. Well, except one FemShep who romanced Liara Lucky that I'm so crazy that I have romanced everyone with different Shepard xD

My first full playthrough of the series (after ME3 was released) I played a modded Mshenko because I knew no gay romance was available until ME3. Even though I liked it, my second playthrough ( I'm halfway through ME2 now) is without the mod. With the mod I always felt I was cheating and it would take me out of the game. But If they are just friends in ME1 and have the argument in ME2 I feel it plays better. I headcanon it as Kaidan being the friend who feels betrayed, still waters run deep, suppressed feelings, blah blah blah. Now when they kiss and make up, it will have been worth the wait. I might romance Cortez in a different playthrough, but I'll stick with Kaidan this time. I like the old friends who become lovers trope.
I've got to say that I feel that ME1 and ME3 really push Liara as the preferred romance. I haven't taken her up on the offer.

ah good old times when we discussed why ME1 and ME2 didn't have gay romance because it's a first person camera whereas dragonage is a third person camera... true story.
Or was it the other way around? Third person narrative in ME vs first person narrative in DA?

I was always ok with playing through the first two games with no romances, and then choosing to pursue a romance with Kaidan in ME3 as a Male Shepard. I kind of like how by not acting on any supposed romantic feelings in ME1 and 2, it adds context to the conversation you can have with Kaidan at Apollo's where they finally admit their feelings for one another. Plus, I would strongly argue that there is subtle tension in conversations you can have with Kaidan as a Male Shepard in ME1 and the Horizon encounter can definitely be interpreted as something more than a friend hurt to see that the Commander he formerly looked up to has joined a terrorist organisation etc.
