BioWare have yet to make unique animations for different weapons in cutscenes. I doubt handedness is going to be a priority. You're probably right that in combat simply mirroring the animation skeleton would produce left-handed animations quickly and effectively, but anything pre-baked (like cutscene animations and potentially some others) is going to cause a problem.
And no, I've never noticed how using my non-dominant hand makes things interesting.

I never thought about it before. Irl I shoot left-handed. I can shoot right handed with a pistol though it's a little awkward but with a rifle it's very difficult.

I'm left-handed (yes, I know, i'm evil, and no it's not a myth, we are all actually quite evil ;-) its true) yet I still play games right handed as in I aim with the left trigger and shoot with the right.
I never thought about it before. Irl I shoot left-handed. I can shoot right handed with a pistol though it's a little awkward but with a rifle it's very difficult.

My husband is also left handed and still plays games like a right handed person. As ignorant as this sounds, I never asked him about him switching the preferences of a game to see if he liked it better.
Sometimes I forget he's left handed.

I'm left handed too, the struggle is real.
Lemme tell you a little bit about how real it was for me.
The magazine release on a Beretta 9 mil is very convenient for a righty but a lefty like myself has to either switch hands or struggle to push that damn button with my index or middle finger. Ridiculous.
The M16 is worse because the bullet casings eject from the right side of the weapon and I got the carbon dust right in the eyes. Terrible.
I like to think that being an evil lefty gives me an advantage in a fist fight though. Too bad I'm not much of a boxer lol.

I never fired a gun IRL. So I don't know this feel, lol. I can tell people about my pain with can openers/notepads/cutting with scissors etc.

Go visit a range then. You might enjoy it. Not really my thing though.
I never struggled with scissors and can openers but notebooks with binders are the devil lol. Just writing with a pencil can be a hassle too because it takes effort to not constantly smudge what I just wrote lol.
The struggle lives.

I write with my right hand and am a right handed shot with a hockey stick.
I shoot pool left handed and shoot a rifle left handed but would shoot a hand gun with my right hand.
My rifle is a right handed and is a bolt action so it's a bit of a handicap to work the bolt as it should be worked.
In other words I am all screwed up with my natural instincts vs my dominant eye.

Yeah, I've heard that pistols with a righty favored grip tend to be a pain for leftys. But there are quite a few guns with universal grips/safety's right?
Also yeah, southpaw boxers are generally said to have a slight advantage against regulars in terms of exposure wise. But in a normal fist fight, it wouldn't exactly matter so much tbh.

I'm left handed, but at this point, right handed feels natural to me. I don't really miss it.
Strangely, that doesn't transfer to real life. I still shoot a rifle left handed.

I play guitar right handed, but that's because I was forced to when I learned and didn't know better. Yet if I play a violin, it's left handed. lol
I still don't want to say I'm ambidextrous though.
