So, with MotB installed, one of the thing we get is a multitude of pre-made characters, complete with background stories and all. Each has 2 version, a level 1 (for general purpose I assume), and a level 18, for MotB. Nearly all of these characters have, let's say, 'interesting' build (like a sorceress specializing in Enchantment for a campaign with 80% of the critters are immune to mind-spells).

Now, I know everyone of us would prefer to play our own dear Knight-Captain (or whoever it is you called the person). Still, I wonder if anyone has ever played MotB with these pre-made characters ? What's your experience with them ? Which ones do you like ?

I didn't play MotB with them, but I sometimes used them as handy characters to pick when testing something I was working on, at least before I had built up a library of characters of my own.  For me, their biggest value was in providing an example of having a wide variety of characters of different levels on hand for playing different modules that have different recommended character requirements.  The main reason I didn't use them at first is that I had installed some new character heads and hair, and those characters used the ugly defaults.  (At the time, there was no Xaltar head replacement pack.)  Now I have characters of most of the base classes, some with prestige classes, and some with extra classes added by Kaedrin, so I have even less reason to use them.  I removed many of them from the local vault.

I never used them myself, so I'm curious.

This library of characters sounds interesting tho. How do I make one ?

I never used them because building a character yourself is way more fun then grabbing a pre-made one. I understand why they where added, so someone could just grab a character and start the game immediately.

But honestly, it's not something I would recommend to any new player. In time honored tradition of Western RPGs, the pre-made builds & auto-levelup are not that great and with some using them is almost a self-imposed challenge mode.

Make a character. Export it. Repeat until you have enough exported characters in your localvault to constitute a library.

There are some trainer modules on the vault that give easy access to XP and gold & equipment for the character you're building.

I've tried to play with some of them. Gotta admit, they're well.., awful.
