I haven't used the ALOT mods yet myself but as far as I know they are very comprehensive compilations, so I don't think you need to worry about anything beyond that unless of course you want extra armor and such.
On that note, I can recommend some form of MOAM. If you use just the armor version, it will not change gameplay but just give you a whole bunch of NPC outfits to wear as casual outfits on the Normandy and it also gives you much more freedom in how you want to use your armors (e.g. use full body armors like the Inferno armor with custom head gear and such).
There are also some content mods for ME3 that do minor changes without affecting gameplay, like the restored Ken/Gabby recruitment conversation and the restored Zaeed conversation mod.
You could also try ME3 recalibrated which mainly does small things to improve some minor glitches in conversations and such.
Oh yea, and I am surprised Deager didn't mention it but if you are using an ending mod where Shep will survive, you may want to consider CEM.
For ME2, there is the shorter loading screens mod, there is one that restores the Illium landing scene and if you want to play the Arrival DLC after the ending of the main game you could try the Arrival triggering mod.
Just be aware that it is best to install ME2/3 content mods before doing the tree scan for the textures. Always read mod descriptions and readmes to check out possible compatibility issues
