With the damage/hit of most enemies, whether you have 1000 shields, or 2000 shields makes very little difference on Platinum. Most of the time, damage will go straight to Shield Gate anyway. A lot of characters struggle to make even that much shielding, so might as well kill things faster in most cases. Power Amp IV and Adrenaline Module III are basically the only Armour Bonus you should use on Platinum. There are always exceptions, that's the way of things.
Adrenaline Modules could be the single most OP equipment in the game.
The difference between 2000 and 1000 shields is pretty easy to see on whatever difficulty. For instance, Phantom hand-thanix out of cover damage on platinum is 250*3*1.4 = 1050 per hit. With 1000 shields, if you try to tank a three shot burst you are dead. With 2000 you are health-gated. Likewise a Ravager won't kill you in a barrage, Rocket Trooper won't break your shields with a rocket...
When you start talking about 825 vs 500, then there are fewer situations where it is obvious that the extra shields are helping (mostly DOT, especially if you can buff DR).
Talking about CM4 on Drell is essentially trolling, given the 250 base barrier which turns to a massive 625 with CM4. Full fitness + CM4 is only 825, which is why nearly nobody recommends CM of any type on Drell. Vorcha are essentially the same story. Adrenaline or Power Amplifier for either.
Most Geth builds usually are better with shield buffs of some sort since they have high base shields, and some have good shield regen bonuses (Advanced Hardware + Fortification for instance).

Many of the enemies do lower damage per shot. It is also easy to see the difference between 1000 and 2000 shields running in between areas of cover against various low tier and mid tier hitscan mobs. It is easy to see the difference if you are hit with various DOT.
There are only 8 enemies at a time on any difficulty, not counting pets. It isn't like there are 100 enemies shooting you at once. And unless you are sitting around with Geth Scanner and massive cover penetration all the time, you probably are going to have to at least partially expose yourself to at least one enemy at a time to engage them.

I don't know where the theory that the level of shields makes no difference on platinum comes from, but it's massively wrong. Well, I've an idea actually, it's by looking at how much damage the biggest enemies do in a single attack. But that's an oversimplification of how the game works. There are plenty of situations where you take only a part of this damage (because you're in light cover, dodging, meleeing, benefiting from a source of damage reduction, etc.) and, while there are bosses in each wave on plat, mooks and sub-bosses are still the majority of enemies. The damage most of these last ones do can be divided into fractions, depending on how much time you stay exposed to their fire. Most of the time, it's not the Atlas' rocket which kill you in platinum, but rather the Cerberus trooper, Centurion, Marauder, Prime's turret or Pyro sneaking behind you. In those situations, having 1000 or even 500 extra shields makes a big difference.
I remember once soloing plat with an Arc pistol Huntress having 700 health and barrier. Then I retried it a few days later with a no-fitness build (so only 500 h/b). I quickly stopped, as I was using way too many ops and gels in the first waves. That may sound surprising, but 200 additional health and barrier gave me the fraction of a second I needed to dodge when I was beeing "Horneted" by Dragoons or troopers. With the no-fitness build, I was instantly down.
