I think multiplayer did a good job of showing how soldiers should play. You have various buffs (activated and constant) around shooting and defence. There are a few low level attacking powers and plenty of grenades. It is supposed to be designed as a relatively basic class for people who enjoy shooters more and don't want to worry too much about powers. They could look to enhance the soldiers carrying capacity and introduce a weight for armor, this would keep a soldier within its basic design constraints.

Weapon restrictions are senseless, lore wise, and not fun in terms of gameplay. Gimping 5 other classes is not the way to "improve" the Soldier.

Going by the statistics BioWare released back before they ended support the Soldier class was the most popular class so putting weapon restriction hurts the game overall since you are taking away from the other classes to attempt to make one feel more unique.
There is also so little customization available in the game to change up how you play so going back to something like class restrictions could hurt the longevity of the game for DLC sales.
To me what the Soldier class needs is to have a completely new set of powers to influence how gameplay goes to give it that unique feeling for just limiting weapons doesn't change how the class plays which is what makes it unique to me. A couple of examples could be that they have a "Free Weapon" which means the weight of the lightest weapon they are carrying doesn't subtract from the weight restriction if they go back to that. An improved HUD similar to the gear items from multiplayer to give more information on the battlefield. Maybe have the ability to add another weapon mod to their primary weapon with a trade-off of some sort. Specific passive increases from armor or weapons have an increased effect over the listed amount. They could even have the gear loadout from Mass Effect 3 multiplayer instead of an active skill to give them more customization instead of skills.

I've been playing ME since 2007, and I've played so many times that I'd put my number of completed playthroughs up against anyone's. I still enjoy playing the Soldier, from time to time, in both ME2 and ME3. It is different enough from the Infiltrator, the other purely gun-using class, to offer a unique gameplay experience.
In some ways, I feel like I'm truly playing the game when I play as a Soldier. I have no biotic detonations destroying all of the unprotected enemies within half-mile, no super-slo-mo sniper scope effect (Adrenaline Rush isn't as exaggerated by equipment), etc... I never use the power bumper crutch, so it's just my rifle and me, as I try to spray them with fiery destruction. The pacing of combat seems to move just a step quicker with the Soldier, and I like it.
So, no, we don't need to remove the Soldier. That's ridiculous. I'm not even sure what most of the complaints are about in these type of threads, honestly. I think the Soldier already feels distinct enough to stand on its own. The classes that need help are the OP Vanguard and the dry toast Engineer. Where are their threads?

More interesting, maybe. It doesn't need to be more powerful. The Soldier absolutely wrecks the game, as does any properly built character.
The Vanguard is way OP and needs to again be reevaluated and rebalanced. They wanted to give it more juice from after ME2, but overdid it. The Infiltrator likewise needs a bit of a downward tuning in connection with Tactical Cloak. Those two classes are head and shoulders above the rest, in my experience (which seems to match up with the experience of the community).
I'm hoping the don't just give us the same old classes with the same old class progression that we've had the last two games. (I know they probably will.) This is a chance for them to use their imagination and grow the franchise. I'd like to see more talents, more branches and progression options for everyone, in MEA. If I had my ideal, they'd simply give us the core, most iconic powers of our chosen class this time around, easily accommodating this low-level power boost via game design. Then, character progression would involve true choices from there, from among options both familiar and new.
Sigh. Probably a dream. I'm sure they'll manage fun gameplay, whatever they do. It's the story and other stuff for which I'm in a hopeful wait and see mode, anyway.

The ME3 iteration, in particular, with EB ammo, really tries to steal the Soldier's thunder. That broken monstrosity, while occasionally fun, skews the perception of those who don't recognize that their favorite class is a broken mess. They want everything else tuned up to the same level of power.

That's exactly why I want weapon restrictions to make a return. There's no reason to play as soldier, when my vanguard can do everything better than a soldier.
Edit: Weapons restrictions causes the player to play the class the way they were meant to be played.
I agree. But it will not happen. The average shooter fan expects all weapons available.

I admit, Vanguard is appealing..

Vanguards are badass, they must keep their OPness. Engineers suck though.

Agreed. It feels more than a bit like Shepard has been replaced by Kratos during combat scenes. Where is my squad, and why did they bother to come?

In any event, it might make sense to return to a more ME1 like soldier who had Marksman/Overkill and Immunity, but with shared cooldown.
There needs to be some sort of practical restriction on weapons across the classes. The ME3 system may as well just be the "have your cake and eat it too" system as there is no practical barrier to gaining high weapon damage without any penalty due to poor weapon balancing and a failure to adhere to the simple principle the encumbrance-cooldown system requires. Namely that the most damaging weapons actually weigh the most.
I am not a big fan of the encumbrance system, although something loosely based on it might work. I am interested in the classes being balanced.

Absolutely. I loved ME1 Soldier (and the default Shepard for that matter), it felt versatile and powerful. They should just remove weight restrictions for soldiers(carry all 5 weapons without penalty because why not) and give the soldier passive a decent boost to weapon damage for all builds.

There are classes that are easier to play than vanguard, and more technically OP.
But none that are as fun. Vanguard has a fantastic YAY factor to the gameplay that the other classes are just missing. Soldiers are great on paper and very effective, but they don't have something as fun as FILL THE BATTLEFIELD WITH DRONES, THROW EVERYTHING WITH MY MIND, HAHAH I AM IMMORTAL (turned down significantly in ME3, alas), VANISH, or CHARGEPUNCHCHARGE.
Adrenaline rush is pretty solid, but soldier could use more pizzaz and less practicality. I was going to argue that soldiers are fine, but then I remembered I almost never play soldier because gunhave just isn't as fun as doing ridiculous things. Soldiers are fine, but they're boring.

Eh, I don't even think Soldier is boring necessarily, even if it lacks a lot of imaginative powers. Of course if you expand to MP soldier classes there is a little more variety. At least there is a wide variety of weapons to fool around with.
A question that is somewhat related to this discussion is whether or not the game should refocus the roles of biotic, tech, and combat powers to bring a little clarity class distinctions. ME3 suffered from a "everybody should be able to do everything" syndrome, especially with respect to the design of the SP classes.

What's the point of removing them now? Just don't play as a soldier if you don't want to. It's no skin off your back that they're there. As has been said, they are for people who don't want to necessarily be bothered playing about with a lot of powers. It's not like soldier Shepard pouts because you don't ever use him/her.
