There are always people unhappy with something. Yet another film is coming. So your opinion is worth of respect but maybe most fans do not think like you.Respect is a tricky thing for one person to feel respected another might not. Using your Star Trek example, I found Star Trek Into Darkness to be very disrespectful to the franchise since it was nothing but fan service.
I am pretty sure she died on my low EMS run to the beam during Priority: Earth.

That was my point, including the legacy of Shepard might be disrespectful to some, but there are going to be people that don't care either for being respectful to the past games could be other features of the game.

According to them, the delay on the release date, is a sign that they want things well done and not rushed.

If the ME:A is a turd, they may say more time is needed to polish the game. But, being a turd, what you get is a polished turd.
However, until an actual honest to god game demo is streamed / showed, all we have is speculation. At the same time, never believe what marketing has to say, at face value.

They can simply write the story from where it's left off(I just mean the endings) and also avoiding the most of ME3 at the same time(that is what some of us are asking for).

I can agree to that about characters but not the endings. If they decided to go with the Ark thing leaving before or during the original trilogy then fine(seems like a poor choice to me) but if they chose to start ME:A prologue post Reaper War then they should canonize some ending otherwise ME:A will likely sound as a ripple effect outta nowhere.
