Let's just say "white," then.
But then "white" people don't constitute a uniform ethnic group either. We still have to subdivide them in Germanics, Alphines, Basques, Uralics, etc.
There is something to be said for under representation of these groups in Mass Effect as the designers heavily leaned of Anglo-Amercian centrism. As such ethnicities tend to be represented from an Amercian point of view. For example in Europe the distinction between "white" and "hispanic" people really isn't often made.

Ah, but that's yet another discussion. Most Turkish people and many Hispanics, for example, look white, yet they're rarely thought of as such.
That's more of an idiotic U.S thing than anything else. The whole "hispanic" category is an artificial U.S invention to begin with, which is as dumb as grouping native english speaking whites, blacks and asians as some kind of "Germanic" ethno-racial category.
I've lost count at the amount of times I had to explain in the Dead or Alive 5: Last Round board on gamefaqs that being black and "hispanic" isn't something inherently contradictory(as if all those hispanophone afro-cubans,afro-colombians,etc don't exist). This was in reference to the Lisa Hamilton character btw.

It's all crap anyway. Back when African-American started to get popular, I had a South African professor, of English extraction. She used to joke that her children were African-American; since she was African and her husband was American.......

Looking at the list, it's not bad on blacks and Hispanics, although it'd be nice to see someone with really African features (I don't think the CC could have handled it, though.) But Asians seem underrepresented, and declining as the series progresses. I think there's just one in ME3 if you didn't buy Kasumi.
If you think about it, there are very few new minor character humans introduced in ME3. Leng, Osoba, Cortez, Vega, Traynor, and Cole are the only ones I can think of off the top of my head... none of whom are white. ETA: Oh, perhaps the Bryson's (Anne and her father, if you bought the Leviathan DLC).

The use of the "African-american term"(which is just a PC synonym for "black") can get real dumb at times, like I once saw on IMDB some black british actor being referred to as "African-american", this despite the fact that this was in a forum for a British movie set in Britain and where he spoke with a British accent.

Good point. If I'd been working there and had thought of it -- not a sure thing -- I'd have switched one or two of those to Asian. Maybe Traynor; I once knew a Burmese girl from Singapore who sounded a lot like her, actually. But they're not doing a bad job at this, and ME3 didn't have a lot of room for new human characters. Better handling of black characters please, Jacob was a terrible attempt. What the hell was bioware thinking?
PS. The argument that bioware didn't know better because of the small black population in Canada is such a bad one. It assumes they are building off stereotypes and if that is what they wanted then they executed perfectly.
