Hawke takes odd merc jobs, charity cases, co-owns the Bone Pit (sadly not a brothel), and works as Kirkwall's unofficial ambassador/advisor to the Viscount, Meredith and Orsino, the Arishok, etc. Diplo and aggressive Hawke can express interest in taking up a more formal position, but I think snarky Hawke would rather just pursue their hobbies (which depending on your playthrough could be anything from supporting the mage underground to hunting down maleficarum...) and get drunk at the Hanged Man.

Initial job is mercenary, both during the initial year and after it. We are trying to raise the money for the expedition and so generally take jobs that pay.
After the expedition, we can be more selective about what we do because we earned a great deal of money from the expedition. Some was used to recover the family estate and I wouldn't be surprised if Varric doesn't invest some on your behalf. The bone pit is initially a source of revenue as well.
Essentially once back in the family estate, Hawke's profession is that of noble but since there doesn't seem much revenue attached to that, they finance themselves by whatever comes along. Whilst Hawke may not have officially applied for the lordship, Mum seems to be working hard to re-establish them as nobility and they do seem to be accepted in that role, considering they are even invited to Duke Prosper's hunting party and a snooty Orlesian like him would not have done so if he didn't regard Hawke as nobility.

Hawke starts as an indentured servant with either the mercs or smugglers before becoming a freelance merc. Aside from that Hawke can get involved in some legal business like the pit and expedition and of course you have arms dealing from selling weapons and armor and other odds and ends found on adventure. Once you get back from the deep roads you technically don't need to work as the treasure you brought back is massive and more then enough to pay your way into high town and cover for you if you are a mage as well as you mage allies and that takes alot of money. There is alot of time between acts and Hawke is presumably just enjoying the leisurely life his/her fortune has bought them, so then Hawke really isn't doing jobs for money in act 2 and 3, which was the whole point of act 1, so much as because their bored and these things just kind of come at one time and they feel obligated to help their friends or their city because not even nobles are above request from the viscount, templar commander, and first enchanter. The pay they get is more just pocket change as it's not needed to pay for the house of food or servant wages, all that is already paid for from the expedition.

Funnily, my main (female) Hawke doesn't own the Bone Pit. Now I really don't want to. ![]()
Seriously though, I just didn't see her as the type to have something like that. She's delicate mage flower. I don't know what she does for a living, besides the helping/killing bit.

My Hawke was kind of a business woman but also saw it as an opportunity to help fellow countrymen. She made sure they got a pay rise and also personally saw to their safety. Which blew up in her face as usual. In the end, she bought/confiscated the mine from Hubert and closed it, seeing that nothing could be done to salvage the cursed thing. (What the hell did they even mine there? Danger? Despair? Death?) However, I could see her get some profit from that... for a time.
I do think Hawke is rich to begin with after the 1st Act, which may be the main reason why they're so well off. (I have no explanation for Hawkes that like to throw money away Gamlen style, though.) They also seem to take up random mercenary jobs and errands, and I'm sure saving the city at least once warrants some reward, so there's that.

Well, Hawke starts as either a smuggler or a mercenary, then does odd jobs to buy their way into the Deep Roads, and I get the impression that after the Deep Roads thing Hawke doesn't actually need a job.

Hawke is self-employed, which means all those people she does quests for have to send her 1099s at the end of the year, and she has to keep detailed receipts and records of loot received and gear purchased in case she's ever audited.

After the fortune they recovered from the Deep Roads, I got the impression that Hawke and Varric had enough cash they didn't need to worry about their financial situation for the rest of their lives.
Both of them being independently wealthy would explain why they are free to spend time in the pub, don't hold down any kind of steady employment and appear to take odd jobs more as something to do, rather than actually needing the money?
Many of the stranger events in Kirkwall can be summed up as "Hawke was bored and got involved". Although whether this involvement solved the problem or unwittingly caused it, tends to vary between cases.

Hawke job is making troubles, solving them, helping to solve other peoples troubles by making more troubles and try to solve them all, solving troubles that cause more troubles, and then leave Kirkwal in an endless trouble...
