Well, they're frozen. They're not sleeping. Their comfort is irrelevant. That being said I wanna dismiss the idea of them not having non-combat uniforms but then there's the beige nightmare of DAI, OTOH DAI was DAs team first time they really had a reason to create a variety of outfits and that's not true of ME. And the DAI team did add a few outfits later.
Guess we'll see.

Eaware doesn't play attention to detail, or don't care to. Example: Shepard's ability to always utilize weapons he doesn't have equipped. For some reason the default weapons were always the place holders in every cut-scene, even though the player had equipped other weapons. it was irritating. So to answer the thread title; in the words of Daniel Bryan:

To be fair just because some sci-fi shows and movies did it doesn't mean that every sci-fi ever is now obligated to copy them on it.
Games like Halo and hell, even Mass Effect, have characters waking up in full combat armour from cryo/stasis pods.

Maybe they do not have pajamas in the ME universe? Or combat armor is supper comfortable?
So, is Bio too lazy to provide proper ship uniforms? I was under the impression that cut scenes were in game generated. If so, they should show "proper" ship uniforms and not combat gear. Is Montreal Bio bypassing the pajamas issue by having Rider permanently wear the same gear as a cost cutting measure? Is this their solution to avoid cut scene conflicts with what you are actually carrying / wearing? ... a "one size fit for all occasions", so to speak?
Well, they did do this in ME2 and ME3 with all of Shepard's squad mates (besides James). I figured it is just a trailer think though, they did have a default ship uniform in 1 and then in 2 and 3 you picked from a few options. I do not see why they would change this now.
