we know the first act of the war proper was the Elven invasion of Orlais. There's no mention of extended border conflict or forays by the Orlesians into the Dales until well after the Elven advance was turned back.

That's not necessarily true. The Dales could simply have had the ability to mobilize faster and better than Orlais after a formal declaration of war. We know for too little about the war - and Bioware is far too comically ignorant about medieval war tactics - to make any inference about the progress of the war or who started it. We just know who ended it.

This continues to baffle me, given that Orlais was presumably using said troops already if it was fighting a losing war.

They weren't using templars and mages. Templars are well trained and well armed foot soldiers of not effectively or actually knights. Mages are, well, you know. All it would take is for the Dales to have free mages in their army, and the fact of an Exalted March would turn the tide.

I don't think we have enough information to say that. Our picture of the war isn't detailed enough for the absence of evidence of an early invasion of the Dales to be evidence of absence.

The fact that elven forces were striking deep into Orlais doesn't mean that Orlesian forces weren't attacking the Dales. It could have been like the 2nd Punic war or something.

(More fictional wars should be like the 2nd Punic war, really)
