All the classes work on Insanity, although vanilla Engineer is probably the trickiest.  Which class do you like the most?

ME2 was the most difficult for me on Insanity mode; recommend using Hard mode to practice with first on all the games.

I'd probably go for the Soldier and level up Immunity as fast as you can. With Immunity on you are pretty much unkillable and as you level up it cools down quicker than the effect lasts, so you can keep it on permanently if you want.

I find it best just to use an NG+ character, in which case the class and build will already be pretty much set (depending on the Level of that character).  The advantage is that you'll already have some decent armor, weapons, and mods... which will make doing the side missions go much quicker.  Enemies on insanity in ME1 tend to be real bullet sponges (they spam immunity a lot and also tend to try to overheat your weapons quite a bit), so it just goes better when you have some decent weapon damage on your side so you can shorten the battles as much as possible.

 

Even though Shepard won't be able to change his/her build (unless you're below Level 60 and you have some points you can add during the game), you will be able to rebuild all your squad mates from scratch, so the best thing here is to use one of the build guides found on the forum or elsewhere to make sure you build your squad members in a way that provides the best synergy with whatever Shepard build you have.

 

For offensive abilities (mine or squad), I use a lot of neural shock and throw and/or lift/singularity and, more recently, discovered the value of sabotage (which is really quite useful).  This keeps the enemies "off their feet" so they 1) aren't firing at you and 2) can't spam their immunities, barriers, etc.

 

As voteDC stated, the soldier is inherently strong and spamming immunity can make it nearly impossible for you to die (if that's how you want to play it).  However, you should also be aware that the cover is such that you can play insanity through strategically as a soldier without hardly using immunity at all.  You can play at a distance, staying safe in cover, and use a sniper rifle a lot of the time or come close in using a shotgun and sabotage... either way with very little difficulty.  Insanity in ME1 really just takes more time to bring down each enemy... things get more varied and interesting in ME2.

Yeah NG+ is what they supposedly balanced Insanity for in ME1.

 

I like the process of building the character, so I don't really play NG+ that much.

No love for Vanguard? I just spam lift, buys you so much time. I guess you can also opt for Adept, but I think they have lower health IIRC

 

For a vanguard, you will need a squadmate with some tech expertise, cos you might run into some tough turrets which cannot be lifted: Tali is great in this regard.

 

You may vary the selection of squadmates according to missions like when you know you are going to deal with organics or synthetics, biotics are more effective against organics and tech powers against synthetics. To me, Shepard vanguard, Tali and Wrex make a good combination

 

All in all, I agree with mrs_anomaly's post, biotics tends to make insanity combat easier, but obviously many can disagree, so I guess you have to try out many options so you can decide what works best for you

 

Also, don't neglect armour and ammo types, they help too

I like the process of building the character, so I don't really play NG+ that much.

I'm the complete opposite, all I do play is New Game Plus these days.

After a while in any game I get a bit tired of having to earn back what I had before, being slow to get back to the awesomeness I know is coming.
