I cant find an advanced graphics settings option. All I see is the "Graphics" Menu from the options menu and it seems very limited. Anyone know where I can go to see texture quality settings and all of the fancy stuff?

There are no specific in-game settings for AA and graphics. Game selects them automatically based on your graphics card, cpu and available RAM. You can find more settings in config folder. You can also try changing settings under [AppCompat] inside GamerSettings.ini file.
Using configurator utility you can put anistropy on 16, enable blur, bloom and filmgrain. This will make look game decent no matter what other settings game has set, provided ofcourse that your videocard can handle all that. Also you can set AA levels specifically for ME2 in nvidia control panel or nhancer.

For AA with Nvidia you HAVE to use the Nhancer.
