Good Question, I'm also curious if giving the proving helm to Ivo changes anything. The dwarven noble origin story is really wonderful :D

I haven't completed my dwarven noble run yet. But I do know that the ending can be very different depending on who you side with. The small choices don't, I think, have an impact in and of themselves. But they do add up to choosing sides. It's either Bhelen or Harrowmont. Afaik Dace is completely unimportant, except insofar as he means that you're siding with Bhelen - unless you plan the last minute betrayal ending in Orzammar. Important issues are *spoiler alert*

Whether you have a son or not. You can get him adopted into either house, if you pass the persuasion checks. Whether you want to rule Orzammar or not. You don't actually get to do so ingame, ofc, but if you side with Harrowmont, he can make you a Paragon and name you his successor. I believe that Bhelen can make you a Paragon too, but doesn't name you his successor.

The historian you can choose to side with in his dispute with a noble promises to write the truth about what happened to you if you havent killed him in the origin - you meet his apprentice in the entrance hall of Orzammar who tells you. But it has no ingame effect. The helm given to Ivo has no effect whatsoever as far as I know and you only meet Ivo's brother as every other char does, in the prooving.
