So, are there any additional pieces of casual clothing that can be unlocked or purchased in-game? The dress uniforms seem a little formal for wandering around the ship, and that deal with the vest is at the other end of the spectrum.

No additional casual clothing, no. I'm sure we'll see more options in DLC, along with weapons, armor, etc.
