Not really, ... I am more the tactical sniper type or battlefield-control type (aka Engineer, etc.), but then I, even though after two failed attempts, finally pulled through and started a Vanguard playthrough (on insanity of course).
Once you get the hang of it, it really becomes fun, though it still stays a love or hate it playstyle:
At least on insanity, you either gloriously win the battle, or you died trying so. Vanguards don't have much space for errors, one wrong Charge and Blamm ... you're gone. But then again, if you survived, you just pulled a Matrix fight. And that is the thing that makes the Vanguard attractive. Soldier is nice, ... shooting things down, ... Infiltrators can One-Shot most enemies which can be quite satisfying (Five enemies, five shots, five corpses, YES!), but the Vanguard playstyle is more thrilling. You are always on the brink of death and you know it. Normally, in the midst of the fight, you have maybe two seconds to get to the next cover or charge at the next foe before you die, so you are always on the run. But you are always running right at your enemy's face and BLAMM, Claymore to the face.
Like I said, either you die, or you just won a fight in a way Hollywood couldn't make up better.
As for Insanity tips, and therefore finally on topic
-Scratch the Shieldpowers for Bonustalent. They don't last longer than two additional seconds and have long cooldowns. Especially for Vanguards, Reave or Dominate ar faaar better choices to compensate the lack of ranged powers.
-Plan your playstyle as fast as you can and build your Shepard accordingly. If you planned for occuring situations, you react the exact one second earlier it needs you to not get killed.
-Plan your Squadmates (very important!). Squadmates are already rather limited in their powers and Squadmates who have something of everything aren't quite helpful. Decide what powers to fully evolve, neglect or spend one point only for, because you can't easily respecialize your Squadmates (Gibbed's SaveEdit helps though).
Hope I could help. I didn't play NG+ yet (and won't be playing in the near future as of yet), but things that help you stay alive on insanity are sure to help you on NG++Insanity.

I just get an itchy trigger finger if I stay behind cover too long

First, don't do New Game Plus. That's exactly what I rushed to do, but it's broken, it doesn't work. The enemies are too strong for you in the beginning of the game, and you'll be struggling to reach par with the enemies while they remain at your level and your level alone.
Secondly, I'd recommend playing as an Infiltrator for sure. I cannot stress how important playing with the Widow Sniper Rifle is if you're playing on Insanity. It saves lives. Seriously. Get it yourself, and name it Fred, as it will be your best friend. If you want, play as a Soldier, but get that sniper rifle somehow.
Thirdly, I'd highly recommend using the Mass Effect 2 General/Upgrades/Squad/Morality guides from masseffect.wikia.com. They've helped me personally more times than I can count, and they're very informative and helpful.
Other than that, don't waste medigel unless you must, be ruthless but practical in combat, and get as much EXP as humanly possible if you're playing on Insanity; those are the only tips I can give without more information.
I wish you nothing less than the very best of luck, you'll need it.

My first character was vanguard on insanity. It was the most fun class so far. Biotic charge is your bread and butter. It requires strategy and timing, can be both defensive and offensive. I honestly found it overpowered with krogan shotgun when maxed out. Vanguard is the only class where you can really fight instead of hiding behind crates most of the time.
I picked barrier as a bonus skill because of enemies like heavy mechs and pretorians that you can't always charge.

Don't feel bad. I played on Insanity just for the achievement, and never again. There are too many places (Archangel, Horizon, COLLECTOR VESSEL) where it becomes stupidly difficult to get through, and the game simply stops being fun. I play on Veteran because it's not controller-smash inducingly hard, but still presents a challenge where you can't be stupid. And when you get through an area, it's satisfying. Most of the people playing on Insanity are likely REALLY good at shooters. Just because the rest of us don't have mad skillz doesn't make them better gamers.
Though it's hella annoying to be on the Character Builds forum and have people eye-roll at me because I ask for build advice for a build NOT being used on Insanity.

No really, it can be done by the non-Leet. I did a video for Klutzy Vanguards, even. Vanguard For Klutzes The trick is to soften things up and scope out the room before doing the charge. Snipe snipe charge charge hide whimper snipe snipe charge charge panic hide whimper, etc.
Seriously, though, I suspect a lot of the eventual ease of insanity has to do with becoming comfortable with the controls and knowing what powers do and how to time the combos. That sort of thing. Of course, SOMEONE will quickly chime in to announce that they played on Insanity out of the box, never used medigel or powers, and Mass Effect is the first video game they've ever seen. They might even be telling the truth. The worlds a big place, after all.

My personal favourite difficulty is Hardcore, enemies have some extra defences, but not the killing power they gain in Insanity. Its just the right difficulty to still be fun, you'll die if you're stupid but not if you're just unlucky. Veteran and lower, apart from the ledge bound monsters you can pretty much melee every damn thing to death, never mind using your guns.

Regarding squadmates, I recommend you leave them alone to do what they want unless it's absolutely necessary to have them do something specific. Left alone, they're surprisingly good at surviving. If you make them do things, they die more often. I've played my Insanity game with my Engineer, Miranda and Kasumi for almost the whole game, and was never in danger of running out of medigel. I did some important battles more or less alone, though.
All in all, Insanity is a high-tension experience. It was fun but I won't do it again soon. Veteran is much more fun for my personal taste - standard battles run smoothly but you still have to be careful in the important ones. I can concentrate more on the roleplaying aspects of the game. Still, I'm glad I've managed to finish one Insanity game. It's a lot more convincing that ME1 Insanity where you had to put thousands of bullets into one enemy.

its all in the squad choice...
you need squadies who benefit your skills. take my sentinel for example, i used miranda and grunt for 90% of the game. reason being than miranda has benifits for the whole squad and her warp is perfect for krogan and vorcha. grunt on the other hand was basically a moving peice of cover to soak up bullets. make the right squad choice and insanity becomes alot easier
