One of the major decisions that you're faced with at the end of ME1 is whether or not to
save the Council.  At the time (my first playthrough) I assumed that
saving the Council meant losing the game or having the Sovereign succeed. I
saved the game just before the big decisions thinking I could change the ending
to save the council and load it into Mass Effect 2, and yeah I got to see the
ending where the Council is saved but I couldn’t load it into ME2. Apparently
it only recognizes the first time I finished the game. Now here´s the question,
do I have to go through another playthrough with my same profile and finish the
game with the final I want, or do I have to start a new profile saving the
Council so I can load it into Mass Effect 2? :(

[rolls eyes] Similar questions detailing transfer of save files or how the system works are all over the forums.

Each time you finish a playthrough the game will automatically create a save which cannot be deleted. This is the save which contains all your data and decisions.

You can pick which save you want to use for ME2.
