2 Words. Easy Mode.
Easy is too easy.
Normal is already frustrating.

Also remember to use the '=' key to select the entire party at once to switch targets if you play PC.

I've NEVER played a game on easy in my life. If a game in unplayable on NORMAL or the game forces you to have just the absolute perfect combination of party members and skills and one single inch outside that, you are toast, then the game developers made a bad product and do not deserve my attention. Shame on you Bioware, shame on you....
As I said try a couple things first. The game certainly got my attention early on but I am doing pretty well now after getting the hang of it.
Oh and your missle weapons...use them. softening up your enemies at range is good to.

If you're just complaining that the game is too hard in general then I'm sorry - there's not much I can do to help.

Try using tactics. Equipment and buffs alone are not enough, Try to analyze why you are dying and devise a strategy. This isn't a hack-n-slash rpg -- tactics are essential.
Analization:
1. Enemies pretend my tank isn't even there.
2. My DPS characters are being hit twice as hard as they hit the enemy.
3. That F*bleep*ING heal-spell cooldown!
4. I'm not particularly stockpiled with healingpots.
5. I rather die fighting than spamming all my healingpots down the throat in a single battle.
6. Tanks are useless because they don't have AoE skills.

I'm not trying to be hardcore, I'm just enjoying, well, not coasting through the game.

It's probably the PC version normal thats equal to the easy on the consoles. If so don't worry it get's easier once your char level up, for now going at it during those though fights on easy should do the trick
You have things mixed up.
Easy mode on the PC = Normal mode on the consoles
Normal mode PC = Hard mode consoles
The PC difficulty is scaled significantly higher than that of the console.

I do HUGE tactics. Using geography to my advantage, pulling on part of a group my way to make it more manageable, making sure to flank enemies and be behind them. Using stun spells and healing spells. I press space bar 400 per fight so that I may micro-manage every single move of every single one of my party members. But in most fights, I usually totally run out of potions and mana and eventually, party members. I use Acids, poisons and maximime the ability usage of each of my party members. Each fight takes me about 15 minutes to run and almost invariably, my party gets wiped. Like I said: NO FUN + TOTAL FRUSTRATION = ME NO PLAY. Bioware really screwed up on that one.
Wow man I am not sure what to tell you.
In alot of fights all I have to do is make sure my team changes targets in the right order and make sure I know where all the enemies are.
Are you a warrior? In most BW games it is best to have your first game be a warrior class until you get the hang of it.

This game is by far TOO much a strategy game than a ROLE playing game... most fanboys here don't want to hear that (I know), it's still true all together.

You don't need a perfect combination of party members to play on normal. What you do need is some skill in tactical combat. For example I run with 1 warrior 1 rogue and two mages, neither of which are a spirit mage. There are many challenging battles but any time I lost it was because I wasn't properly utilizing what I had available to me. I suggest you take the time to read all the abilities of your characters carefully and adjust how you're approaching these fights.
What do you have in your group?
