This is just me being a tad bit picky. But I've always perfered if corpses stayed just to give you that feel that some sort of fire fight has happened. I'm having some trboule making them stay in ME1 but not ME2.
Here's what I tried
1) Downloaded notepad++
2) Went into the (drive):/Mass Effect 2/BioGame/Config/PC/Cooked and opened up the Coalesced file using notepad++
3) ctrl+f and typed in 'Corpse' and it lead me to exactly where I wanted to change the values.... except if you change the values the game crashes when it starts.
Anyone know a fix

I added my post on the same topic the same time you did... From what I understand, you need some kind of editor to make the changes. as you found out any direct changes crashes the game. I'm guessing that changing the 5.0 to a larger number would extend the timer. Maybe 120.0(two minutes) seconds would work. Im just not good enough with computers to use an editor.
Mass Effect 2/BioGame/Config/PC/Cooked
m_fCorpseCleanupFirstAttemptTime=5.0 ;How many seconds to wait until the first corpse cleanup attempt

yeah I tried changing their values using notepad++ but it seems that no matter what value I put the game will cash
using the notepad alone will not work. You need to use an editor to make the changes. I really dont understand it, Im just telli g you from what I have read. There is a ruby editor that might let the change be made, I just dont know how to use it...

However, like Dayson, when I changed the values I didn't see any difference; the corpses still disappear the second I turn around. I understand the rationale for this on the Xbox, but there's no conceivable reason for this to happen on PC. It's an indication of sloppy platform conversion IMO.
If anyone figures out a way to fix this, please post here.

There's a nifty compiler for editing the coalesced.ini file that can be found here.

right - for most, I doubt keeping the extra dead bodies showing during the brief firefights would overtax their systems. I remember when Dragon Age first came out it had the same deal and it was fixed with patch 1.02. Dissapearing dead bodies take away from the atmosphere. Sure, the bodies that drop the clips can go, but lets keep the rest from dissapearing. I want to see the carnage I create! We need to present this to the folks at Bioware. Im sure it wont be a big deal to change it.

Here is an example. If you change the m_fCorpseCleanupFirstAttemptTime from 5.0 to 120.0 you have ADDED two characters to the file. 5.0 = 3 chars and 120.0 = 5 chars. This means that you must then subtract two characters from something irrelevant in the file, ie, take two characters off the end of one of the comments (in this case the stuff that follows a semicolon ";"). If you are just going to be making really minor changes like this, then it is often faster to just do it this way instead of dealing with a compiler, particularly if you are not familiar with such stuff.

Has there been any progress on getting body corpse to stay? I've tried for few hours now editing things but nothing makes any difference, look away for a few seconds and the bodies disappear.
