It looks like if you save a character, but then later open that character to edit it, the character does not remain exactly as you saved it.
You can see these differences in two of the characters I have uploaded. I created a Dwarf Noble, and I was really happy with his face and portrait, but I didn't like his name. So, I opened him to edit and changed only his name - but then when I saved and uploaded that new character, the portrait was subtly different. The complexion and the shape of the nose are the two most obvious differences.
Hopefully when the game is released we'll be able to edit these characters without having them change in ways we don't intend.

It seems that the best way to edit the characters "just a little" is to open the following path on your drive:
My Documents\\BioWare\\Dragon Age\\Pre-release Characters\\
And then open the corresponding .xml file in notepad.
There you can edit a number of things, albeit that means uploading him is a no-no until the full game comes out and you start playing him...
Unless if you hit edit, there's a way to upload without sending having to press next...

AutoUploadProfile=1
AutoUploadStats=0
Could setting these both to 0 fix it? Hm.

Editing the xml only effects the online data the social site uses, it does not effect the data the game reads at all. If you hit the 'upload' button all your manual changes to the xml will be overwritten anyway.
It has not been explained whether the changing character features are not being saved in the first place, or just not being loaded from the .chr properly (perhaps due to the CC being stripped out of the main game). Its a nagging bug that effects many races, some elven females don't save the eye type setting, humans tend to forget which face preset they had, Tattoos screw up on the wild elves, etc etc.
I force myself to take screencaps of my slider settings for characters I'm particularly fond of and intend to recreate from scratch should it be necessary with the final game. I'm operating under the notion that either the existing characters are dead in the water or there are some significant improvements/options in the final game CC that make recreation a necessity anyway.

This was also the case for me and the only way I can find to 'restore' your character is to choose him/her 2 times...first is the one with the change then go back to character selection and choose the same character again...the most obvious change is in the portrait section...unless you're using the default option for the portrait that is

So far all I've noticed when editing a character is the voice and portrait gets reset.

I came back and re-edited my character, and for one thing the expression slider definitely went back to the default, and I had to change it again.
One thing is certain, however: after I uploaded my character again to update the online portrait, the character stats and equipment no longer appear.

My Human mage saved fine, but when I made a Dalish Elf...his facial features didn't save and the tatoos always reset...
There's a post about the CC, for bugs..and all this has been said in there..
I understand though, frustrating if you spent that long on the char and then it got messed up.
