In short, is there a better dagger or daggers other than Rose's Thorn that I should be trying to find/buy?

Overall the Edge is the best. If you don't have it, you might have to manually download some DLC files for it.
Otherwise the Dead Thaig Shanker you get in Shale's quest in the Deep Roads is pretty nice.

Yes, that's how I got it. (I have the PC version; I'm not sure if this makes a difference.)
I wouldn't even waste time (or money) buying other daggers: eventually, high-level--but otherwise useless--equipment starts dropping all over the place. Sell that stuff and you'll rack up the gold fairly quickly and will have enough to buy The Rose's Thorn before too long.

You can also intsall the lucky stone, amulet of the warmage, embri's many pockets, helm of the deep, mark of vigilance, lion's paw, wicked oath.

Well, if you destroy it, then it's probably best if Shale is present during the last part of the Deep Roads (you get a chance to switch your party composition for that last part). It has some conversation there.
Otherwise if you want to keep it... yes, better leave Shale in the camp... and make sure your Coercion is high to tell it a bunch of lies later....

The cheese knife is only really really good until later on in the game. You'll reach a point where other daggers are just too good to pass up and the cheese knife will be but a memory. I've held on to mine hoping that eventually I'll be able to equip it on Morrigan. But that's the only reason.
Later on in the game, the money comes alot easier. You just gotta be wise about how you spend it. And that can be difficult since crafting your consumables in general can get pretty expensive (but still essential). Later on it's just alot easier to make the money required to be prepared and have the consumbales you want always on-hand. A decent weapon upgrade here or there doesn't hurt but runes can get expensive too. Try to find a balance between what you want and what you need and keep saving. Eventually you'll have enough to get the really good vestments.
I've heard that one way to make really easy money is to buy the potent lyrium potion recipe at the wonders of thedus shop in Denerim and make as many as you can at a time, and re-sell it at a certain location (can't remember where but it's in these forums). You make a few silvers profit for each one you make. It can just get really boring from what I heard (but perhaps worth the effort just depending on how you look at it).
Swiping guards and commoners in Denerim and Orzrammar can also land you a few extra sovereigns but that also takes a little time.

The best dagger is The Rose's Thorn though. If you don't include DLC daggers like The Edge or Dead Thaig Shanker, the other good daggers worth wielding are Thorn of the Dead Gods (from Deep Roads) and Beastman's Dagger (from the Circle Tower).
