I tried the 2-timing romance (Morrigan and Leliana) both ways. First I got my 1-night stand with Morrigan, then got Leliana up to 90s, at which point she complained about Morrigan and forced me to choose her. So I went to Morrigan and the "amicable break-up" dropped her to 85, but she seems to be sticking around.

Then I went back to a save and romanced Leliana first (not finished though). Then when I went to Morrigan she refused to get romantic because "there is another".

What I really want is to use Leliana (for sex and the Bard training), then dump her completely, (because my PC Rogue is better than her in every way, except for that super longbow she has!), and then finish the game with Morrigan in love with me. Is that possible? If I do the nasty with Leliana, is there a way to dump her so that Morrigan will be satisfied that she's gone?

Yes. A gift or so depending on your starting approval level and you can strike up your romance with Leliana again, regardless of being in love with Morrigan and having/wearing her ring. I exited my last game wearing Morrigans ring, having both at 100% approval, romancing Leliana.
