In the last games we got a ton of side quests to go on, but I felt that they're severely lacking in this game. Are there any additional planets to explore or problems to solve that you aren't told about specifically?

There are tons of anomalies on planets scattered throughout the galaxy. There's no indication in-game of what these are though, so unless you find a list online you just need to visit every planet until EDI detects an anomaly.
