I'm wanting to create a custom armor and weapon set, the only thing I want to do is take the Anchient Elven Armor and Bow of the Golden Sun and give them a new color, how do I do that?

You need to create custom tint overrides for them. There's a tutorial on that located here:
Tutorial for Custom Tint Overrides
What you're doing is looking at an item's tint map and placing new tints on each channel that override the defaults. A red area on the tint map is tinted by whatever color is specified in the red channel of the override tint, and so on.
It can all be a little confusing at first, but after your first time you'll be able to do it in under 5 minutes easily.
