Best ammo to use?

Personally though, I've found cyro ammo works best with the shotgun to stop charging enemies, and incendiary ammo complements the sniper rifle's anti-armor.

Of the basic ammo types it's really just Disruptor Ammo for Synthetics or Shields and Incendiary for Armor, Health and Organics.
My personal favorite for my soldier is Armor Piercing Ammo with the Battle Rifle. It's not that effective against shields but it still knocks them down pretty quick. Extremely effective against Armored targets with a Sniper Rifle.

I have incinerate for enemies with armor krogan are deadly, but that armor piercing gives me a slight edge with its +50% damage.

Yeah, Warp Ammo is the way to go if you don't like to goof around with switching.

SMGs and Assault Rifles are good against shields and Barriers but weak against armour, Incinerate ammo is good against armour so add Incinerate to SMGs, Cryo Ammo if fighting Fleshies though.
Heavy pistols, Sniper Rifles and Battle Rifles are good against armour so use Disruption ammo on these guys or Cryo against Fleshies.
If you come across something with particularly good shields/barriers or armour then stack effects. Fire with hard hitting, disruptive with rapid hitting.
Edit: Oops, forgot Shotties, they are close range and better against shields than armour but pretty good against both so probably Incinerate would be better.
Edit 2: If you want to make the last 20% of the game easier I'd recommend maxed out Cryo with mid to maxed Incinerate. Cryo for the vast majority of Collectors and Husks, Incinerate for the controlled Collectors and Scions.

I never bothered with cryo ammo. I didn't like it in the first game, and I didn't like it in this game either. But inferno X were my favourite round from the first game, so I stuck with the same in ME2. There's something gratifying in shooting my enemies and setting them on fire at the same time.
