what is, in your opinion, the best ammo type to use, and why?

Depends entirely on the situation and how you play.

Personally though, I've found cyro ammo works best with the shotgun to stop charging enemies, and incendiary ammo complements the sniper rifle's anti-armor.

Also depends on what class you play, a Sentinel for example has abilities to deal with all sorts of protection as they are. Ammo types for them is just a bonus really.

Agree with Sylvanspirits, as a soldier I switch ammo several times in every combat in order to make my dmg most effective.

Warp ammo is most effective for general situations as its a dmg boost against armor, health, and barriers. I like it as a standard upgrade for my vanguard if I feel like being offensive, otherwise I just take barrier.

Of the basic ammo types it's really just Disruptor Ammo for Synthetics or Shields and Incendiary for Armor, Health and Organics.

My personal favorite for my soldier is Armor Piercing Ammo with the Battle Rifle.  It's not that effective against shields but it still knocks them down pretty quick.  Extremely effective against Armored targets with a Sniper Rifle.

for my Engineer I use the bonus Armor-Piercing ammo, I have heavy overload which usually blows through a enemies shields/barrier, I also use the upgrades to the weapons to get shield bypass damage increase.

I have incinerate for enemies with armor krogan are deadly, but that armor piercing gives me a slight edge with its +50% damage.

I pretty much stick to warp unless the enemy has heavy shields. I might be tempted to switch at this point, but usually warp chews right through them

Yeah, Warp Ammo is the way to go if you don't like to goof around with switching.

Otherwise...
SMGs and Assault Rifles are good against shields and Barriers but weak against armour, Incinerate ammo is good against armour so add Incinerate to SMGs, Cryo Ammo if fighting Fleshies though.

Heavy pistols, Sniper Rifles and Battle Rifles are good against armour so use Disruption ammo on these guys or Cryo against Fleshies.

If you come across something with particularly good shields/barriers or armour then stack effects. Fire with hard hitting, disruptive with rapid hitting.

Edit: Oops, forgot Shotties, they are close range and better against shields than armour but pretty good against both so probably Incinerate would be better.

Edit 2: If you want to make the last 20% of the game easier I'd recommend maxed out Cryo with mid to maxed Incinerate. Cryo for the vast majority of Collectors and Husks, Incinerate for the controlled Collectors and Scions.

I prefer disruptor ammo because not only does it do increased damage against shields and synthetics it also stuns synthetics and overheats your enemies' guns.

Really max Armor Piercing / Tungsten rounds seem to be the best ammo for a Soldier or Infiltrator.

+70% damage to armor and health is huge. On higher difficulty levels, everything has amor making this ammo great for the entire game. Barriers are rare, and shields can be taken down effectively with overload.

i like you dont even have to spec it, garrus can spec it to squad ammo. and garrus is mean with that viper

basically armor piercing or warp are the best warp is more for lazy people like me who dont like to switch ammo types where as armor piercing is better for sentinels since they can use warp and overload to get access to armor and health faster

But the squad version is only 50% I think.  Speccing it yourself is worth it for the extra 20% in my opinion.
Then you can rely on Jack for squad warp ammo for cases where you run into tons of enemies with Barrier and/or Regen.

Disruptor ammo and incendiary. Disruptor for shields and synthetics, and incendiary for everything else or armoured enemies.

I never bothered with cryo ammo. I didn't like it in the first game, and I didn't like it in this game either. But inferno X were my favourite round from the first game, so I stuck with the same in ME2. There's something gratifying in shooting my enemies and setting them on fire at the same time.
