I have a question about the 360 verison of the game
I realize that it is 2 discs, but I am still curious if it possible to install the disc (I have only barely played the game so far, so I don't know how or where the disc switching comes into effect). I'd like to be able to reduce load times, even if it's just a little bit
Any help or answers would be very grateful, thanks in advance.

Yes, you can install the discs. I found that it barely sped up load times, but it was an improvement. They actually did quite well in designing when the disc switching occurs. About 1/4 of the way into the game you reach a point of no return, which is where you switch to disc #2. About 3/4 of the way in, you reach a 2nd point of no return which is where you switch back to disc #1. In an interview prior to release, Casey Hudson stated that they did this to avoid gamers having to go back and forth between discs in the middle of the game. It worked out really well.

You know what I need help with this situation as well. So far I've recruited Archangel, Mordin, Grunt and Zaeed (dlc), did side quests for normandy staff, loyalty mission for Zaeed, and completed a mission on Horizon, scanned a few planets for resources and did one Anomoly signal mission. soon after I was told I had to see Miranda and Jacob assuming to do loyalty missions, and got new dossiers, I was told to insert disc 2.
Just kinda weird it came up to soon. Or am I on the right path.???

When installing the discs does it prompt you to insert disc #2 for the install or do you just install each separately?

You have to install each disc separately. You still have to swap discs for the game to verify you own the discs, but other than that, it runs fine.
