Although I feel that having the game without subtitles makes it feel more like a movie, I have them on just in case I don't understand what someone's saying. I turn it off in later playthroughs.

Yes.  Our xbox 360 is near our bedroom and since I sometimes play after my husband goes to bed I turn the sound down.  Besides, sometimes I also have trouble catching what they said.  I just wish the subtitles were a bit easier to read.  I didn't have any problem in ME but ME2 is not as readable.  at lesat for me.

I used subs on my first play through so I got everything said and turned off second time so I can watch more of the action

I don't play with subtitles, only because I get distracted by them.
